Mushroom Porridge Ingredients
- 1 King Oyster Mushroom
- 3 Shiitake Mushrooms
- 1/4 Onion
- 1/5 Zucchini
- 1/6 Carrot
- 1.5 bowls of cooked rice (approx. 300g)
- 1L Anchovy Broth
- 1/2 tsp Salt
Cooking Instructions
Step 1
Let’s start by preparing the mushrooms. Wash the king oyster mushrooms thoroughly, trim the ends, then thinly slice them to about 0.5cm thickness. Finely mince these slices. Similarly, remove the tough stems from the shiitake mushrooms, rinse them lightly under running water, and then finely mince them for a uniform texture in the porridge.
Step 2
Next, prepare the zucchini, carrot, and onion. Remove any seeds from the zucchini and carrot and wash them well, keeping the skin on. Peel the onion. Finely chop all these vegetables. Ensuring all ingredients are diced to a similar size will result in a more pleasant texture in the finished porridge.

Now that all your ingredients are ready! Pour 1L of anchovy broth into a pot. Add all the minced mushrooms and chopped vegetables you’ve prepared. Turn the heat to high and bring it to a boil.

Once the broth is boiling vigorously, add the 1.5 bowls of cooked rice. Use a spatula to break up any clumps of rice and stir well to combine. Add 1/2 teaspoon of salt for seasoning. Reduce the heat to medium-low and simmer until the rice grains have softened and broken down, achieving a porridge-like consistency.

It’s crucial to stir the porridge regularly, scraping the bottom of the pot to prevent it from sticking. Continue to simmer gently for about 20 minutes, or until the rice grains are completely softened and the porridge has a smooth, thick consistency. Patience is key for a delicious result.

You’ll know the mushroom porridge is nearly ready when it thickens nicely and the rice grains have softened and dispersed beautifully. This appearance indicates it’s been cooked to perfection.

Finally, check the consistency of the porridge. If it’s too thick, you can add a little more water or broth. Taste and adjust the seasoning by adding a pinch more salt if needed.
