Main Ingredients

- 10 sea squirts (optional)

- 1 Tbsp salted shrimp

Cooking Instructions
Step 1
To create a clear and flavorful broth, start by boiling about 1.5 liters of water in a pot. Add one dried pollack head (if you have one) and 3-4 pieces of dried kelp. Bring to a rolling boil. Once boiling, remove the kelp and continue to simmer for another 15 minutes to extract the flavors. Strain the broth and discard the solids.
Step 2
Add a handful of sliced radish and 3 cloves of minced garlic to the prepared broth and bring it back to a simmer. We’ll add the remaining garlic later. Gently place the thoroughly cleaned, whole fresh cod (a large one) into the pot. If you have sea squirts, add about 10 of them now. Sea squirts add a wonderful umami and refreshing taste.
Step 3
It’s time to prepare the delicious seasoning. In a small bowl, combine 1 Tbsp salted shrimp, 1.5 Tbsp red pepper flakes, 2 Tbsp anchovy sauce, and 1 Tbsp soy sauce. Mix well to create the seasoning paste. Stir this paste into the simmering cod soup until fully dissolved. Add a handful of julienned green onions. You’ll adjust the final seasoning with salt later.
Step 4
Now, add cubed tofu and bean sprouts to the soup. Keep the lid open and let it simmer for at least 10 minutes. This allows the cod to become tender and the refreshing essence of the bean sprouts to infuse into the broth. Finish by sprinkling a pinch of black pepper. If you added sea squirts, use scissors to snip about half of them. This releases their juices, making the broth even more refreshing and flavorful!
Step 5
