Ingredients
  • 3 Eggs
  • 1/4 Onion
  • 1 Green chili pepper
  • A little Enoki mushrooms
  • 1 Tbsp Minced garlic
  • 2 Tbsp Gochugaru (Korean chili flakes)
  • Pinch of Black pepper
  • 1 Tbsp Chicken stock
  • A little Glass noodles (pre-soaked)

Cooking Instructions

Step 1

Thinly slice about 1/4 of an onion. Using a moderate amount will ensure a cleaner broth.

Step 2

Place the sliced onions in a Korean earthenware pot (ttukbaegi). Add 1 tbsp of minced garlic, 2 tbsp of gochugaru, and 1 tbsp of cooking oil. Sautéing these ingredients first is the secret to a rich flavor.

Step 3

Stir-fry over medium-low heat, being careful not to burn the gochugaru, until the onions become translucent. Lightly toasting the gochugaru will bring out its spicy aroma.

Step 4

Now, pour in 2 cups (about 450ml) of water and add 1 tbsp of chicken stock. This will greatly enrich the broth’s flavor. Bring it to a rolling boil over high heat.

Step 5

Once the water is boiling vigorously, finely chop 1 green chili pepper and add it for a spicy kick. You can adjust the spiciness to your preference.

Step 6

Add the pre-soaked glass noodles. The noodles will thicken the broth slightly, making it a more satisfying dish.

Step 7

When the soup comes to a boil again, crack 3 eggs into a separate bowl and gently whisk them without creating too much foam. Slowly pour the whisked eggs in a circular motion into the bubbling soup. They will form beautiful ribbons as they cook.

Step 8

If you have enoki mushrooms, add a small amount. They add great flavor and texture. Arranging them nicely on top of the soup enhances its presentation. If you don’t have them, it’s perfectly fine to omit them.

Step 9

Finally, sprinkle with a pinch of black pepper to complete the spicy and refreshing taste of the egg soup. The pepper’s aroma balances the overall flavor.
