On days like today when the weather is chilly and a warm broth is just what you crave, I made Kimchi Mandu Jeongol using ingredients from my fridge. This hearty dish, filled with delicious dumplings and a savory broth, is the perfect meal to chase away the cold.
Main Ingredients

- Beef roll dumplings 5 pcs
- Galbi dumplings 5 pcs
- Shiitake mushrooms 2 pcs
- Oyster mushrooms 1 handful
- Green onion 1/2 stalk
- Cheongyang chili pepper 1 pc (optional)

Step 1
Prepare a deep pot. First, arrange a generous amount of kimchi dumplings, which my husband loves, at the bottom. Then, artfully place the beef roll dumplings and galbi dumplings I prefer on top. This makes it visually appealing and adds more flavor layers when cooked.

Arrange sliced mushrooms (like shiitake and oyster mushrooms) over the dumplings. Slice the green onion diagonally to add color and aroma. If you prefer a spicier kick, thinly slice a Cheongyang chili pepper and add it to the pot.

Let’s make the delicious seasoning sauce! In a small bowl, combine 3 Tbsp gochugaru, 1 Tbsp minced garlic, 1 Tbsp oligodang for a touch of sweetness, 1 Tbsp soy sauce for savory depth, and 4 Tbsp anchovy sauce for a rich umami flavor. Mix them well. You can also add a little Korean soup soy sauce (guk-ganjang) according to your taste.

The key to a great mandu jeongol is a deep, flavorful broth! Pour in enough anchovy-kelp broth or water to generously cover all the ingredients. If you have well-fermented kimchi (mukimchi) on hand, you can lightly scrape off excess seasoning and cut it into bite-sized pieces to add for an even richer and spicier broth.

Now, evenly spoon the prepared seasoning sauce over the dumplings and vegetables. Bring the pot to a boil over high heat, then reduce to medium-low heat. Let it simmer gently for about 10-15 minutes, being careful not to let the dumplings burst. This allows the ingredients to cook through and the flavors to meld beautifully.
