Sung Dong-il’s Special Kimchi Stew Recipe Ingredients
  • 250g Pork (shoulder or leg recommended)
  • 1/4 head Aged Kimchi (well-fermented)
  • 1/2 Onion
  • 1/2 Green Onion (Scallion)
  • 2 Cheongyang Peppers (spicy Korean chili peppers)
  • 2 Tbsp Gochugaru (Korean chili powder, adjust to taste)
  • 1 Tbsp Minced Garlic
  • 2 Tbsp Dried Shiitake Mushroom Powder (for extra umami)

Cooking Instructions

Step 1

㉠ Rinse the aged kimchi lightly under cold water to remove excess sourness and any funky smell. Squeeze out any excess liquid and cut it into bite-sized pieces, about 2-3 cm long. ㉡ Slice the onion into thin strips. Halve the Cheongyang peppers lengthwise and remove the seeds. Cut the green onion in half lengthwise, then into large pieces. Mince the garlic. (If using whole garlic cloves, slice them thinly.)

Step 2

㉢ In a pot, add the bite-sized pork pieces. Add the minced garlic (or sliced garlic) and a little cooking oil (or you can render the fat from the pork itself). Stir-fry over medium heat. ㉣ Once the pork starts to turn white on the outside and is about half-cooked, add the chopped aged kimchi to the pot and stir-fry them together. Sauté until the kimchi becomes tender and slightly softened. Then, add water (enough to cover the ingredients) and the dried shiitake mushroom powder, and bring to a boil.

Step 3

㉤ To further eliminate any pork odor and enhance the spicy flavor, add the gochugaru, 1/2 Tbsp of doenjang (soybean paste – optional, for added depth), the sliced Cheongyang peppers, and more minced garlic. (If you have leftover minced garlic from step ㉡, add it here.) ㉥ Allow the stew to simmer for a bit so the flavors meld together. In the final step, add the sliced onions and the large pieces of green onion. Simmer for a little longer, just until the onions and green onions soften.

Step 4

㉦ Once the stew has thickened slightly and all the ingredients have harmonized in flavor, sprinkle with toasted sesame seeds for an extra aromatic touch. Serve hot with a bowl of steamed rice and enjoy!
