Main Ingredients
  • 2 Eggs
  • 1/2 can Spam (canned ham)
  • 1/2 cup Kimchi (chopped into bite-sized pieces)
  • 3 Tbsp Cooking oil
  • 1 bowl Warm rice
  • A little Green onion or Scallion (chopped)

Seasoning & Sauce
  • 1/3 Tbsp Sugar
  • 1/3 Tbsp Soy sauce
  • Mayonnaise, to taste (adjust as needed)

Cooking Instructions

Step 1

First, prepare all the ingredients. Dice the Spam into approximately 1cm cubes. If you’re using aged kimchi, it will add a wonderful tang. Lightly squeeze out excess juice and chop it into bite-sized pieces with a knife or scissors. Whisk the eggs in a bowl until smooth. If using green onions or scallions, chop them finely.

Step 2

Heat 1 tablespoon of cooking oil in a pan over medium heat. Pour in the whisked egg mixture. Using chopsticks or a spatula, stir gently to scramble the eggs until they are softly cooked. Remove from heat while still slightly moist, and set aside to place on the rice.

Step 3

Arrange the freshly made fluffy scrambled eggs around the edge of the warm rice in your bowl. This arrangement will make the rice bowl look more abundant and appetizing.

Step 4

Now it’s time to stir-fry the Spam. Add another tablespoon of cooking oil to the pan and add the diced Spam. Fry until it’s golden brown and slightly crispy. Avoid cooking on low heat for too long, as it can render a lot of fat. Medium heat works best for a quick fry.

Step 5

Using the oil remaining in the pan after frying the Spam (or add another tablespoon of cooking oil if needed), add the chopped kimchi. Stir-fry the kimchi with 1/3 tablespoon of sugar and 1/3 tablespoon of soy sauce. This will create a savory and slightly sweet flavor profile as the kimchi softens.

Step 6

Once the scrambled eggs are arranged around the rice, place the stir-fried Spam in the center. Next to it, add the seasoned stir-fried kimchi. Finally, sprinkle the chopped green onions or scallions over the top for a burst of color and fresh aroma. (You can also add shredded seaweed for an extra layer of flavor.)

Step 7

Now for the grand finale of the Spam Mayo Kimchi Rice Bowl: the mayonnaise drizzle. To achieve a thin, even drizzle instead of thick blobs, cover the opening of the mayonnaise bottle with plastic wrap or cling film. Then, poke several small holes in the wrap with a toothpick. This technique allows for a delicate and artistic application.

Step 8

Drizzle the mayonnaise over the rice bowl in a zig-zag pattern for an appealing presentation. The creamy and rich mayonnaise will beautifully complement the other ingredients.

Step 9

This Spam Kimchi Rice Bowl is a hearty one-bowl meal that I made with care. I usually don’t photograph my meals when I use mixed-grain rice, but today I used plain white rice, which looked so lovely that I decided to take a picture. It tastes even better when it looks good!

Step 10

Once you take a spoonful, you won’t be able to stop! This is the irresistible flavor of Spam Mayo Kimchi Rice Bowl that will have you reaching for more. It’s a taste everyone knows and loves, making it a comforting and delightful meal.

Step 11

On busy mornings, when making side dishes feels like a hassle, this super easy one-bowl meal can be ready in about 5 minutes. It’s perfect for lunch and makes a satisfying solo meal without needing any other side dishes.

Step 12

When you want to make a simple and satisfying meal for yourself, this Spam Kimchi Rice Bowl is delicious enough on its own, without needing any additional side dishes. I made it after a while and it was as delicious as I remembered. Enjoy this simple yet filling rice bowl!
