First, let’s prepare the ingredients that will add wonderful flavor to your omelet. Finely dice the onion. Cut the Spam into small, bite-sized pieces (about 0.5cm thick and 1cm long). If using frozen green beans, you can use them as is; if fresh, trim and cut them into 1-2cm lengths. Feel free to add any other leftover vegetables you have on hand, like carrots, mushrooms, or bell peppers, or even other types of ham!

In a clean bowl, crack 6 fresh eggs. If you have an egg allergy, you can substitute with another protein source. Add 1 tablespoon of cooking wine (like Mirin), a pinch of salt, and a dash of pepper. Gently whisk with a fork or whisk until the yolks and whites are well combined. (Tip: I got double-yolked eggs this time, so I have 8 yolks! Double-yolked eggs are extra nutritious.)

Sautéing these ingredients beforehand will significantly enhance the omelet’s overall taste.
