Main Ingredients
- 1 pack silken tofu (approx. 300g)
- 1/5 carrot (small)
- 1/2 onion (medium)
- 2/3 stalk green onion
- 2 eggs
- 1/2 to 1 bowl warm cooked rice
- A little cooking oil
Seasoning
- 1 Tbsp oyster sauce
- 1.5 Tbsp soy sauce
- 1 Tbsp oyster sauce
- 1.5 Tbsp soy sauce
Cooking Instructions
Step 1
First, let’s make the sauce that will be the key to this delicious rice bowl. In a small bowl, combine 1 Tbsp of oyster sauce and 1.5 Tbsp of soy sauce, mixing them well. Preparing this in advance will make the cooking process much smoother.

Heat a non-stick pan over medium heat and add about 1 to 2 tablespoons of cooking oil. Be careful not to use too little, as the ingredients might stick.

Add the chopped green onion to the pan and stir-fry until fragrant, releasing its sweet aroma without burning. Sauté until the aroma of the green onion becomes prominent.

Add the shredded onion (1/2 piece) and finely minced carrot (1/5 piece) to the pan and stir-fry together. Cook until the onion becomes translucent and the carrot is slightly tender. This will bring out the natural sweetness of the vegetables.

If the pan seems too dry, add a tiny bit more cooking oil. Now, gently press the silken tofu pack and pour the contents into the pan. Break up the tofu into large chunks with a spoon or spatula as you stir-fry.

Once the tofu and vegetables are somewhat mixed, pour the 2 beaten eggs around the edges of the pan. As the eggs begin to set, gently mix them in with the tofu and vegetables.

Pour the prepared sauce mixture evenly over everything in the pan. Quickly stir-fry to combine the sauce with the tofu, vegetables, and eggs.

Continue to stir-fry, gently breaking up the tofu into soft, crumbly pieces as the sauce coats everything. Cooking over medium heat rather than high heat will help preserve the soft texture of the tofu. Be gentle to avoid mashing the rice grains if you’ve added them already.

At this stage, taste the mixture. If it needs more seasoning, add a pinch of salt. For those on a diet, reducing the rice to just 2-3 spoonfuls and generously topping it with the tofu and egg mixture is a great way to feel full and eat healthily.
