Step 1
The key to a delicious dried vegetable salad is boiling the vegetables properly! Especially with dried gondre, its texture and taste can vary greatly depending on how you boil it. We’ll be using one 80g packet of dried gondre today. There are two main methods for boiling dried vegetables: soaking them in water first and then boiling, or boiling them and then soaking them in cold water. Today, I’ll be using the method of boiling first, then soaking in cold water. This makes the namul even softer.

First, rinse the dried gondre leaves under running water. This step helps remove any dust or impurities that might be present.

Now, in a large pot, add plenty of water and start boiling the dried gondre. It’s important to use enough water so the leaves are fully submerged.

We boiled the dried gondre for about 1 hour. The boiling time can vary depending on the type of vegetable and how it was dried. Some vegetables become tender after just 10 minutes of boiling. During the boiling process, gently press a strand of the namul with your fingers to check for tenderness and decide if it needs more boiling time. For me, 1 hour resulted in the perfect tenderness.

Once the gondre leaves are sufficiently boiled, don’t drain them. Instead, keep them submerged in the boiling water and cover the pot. Let them soak for about half a day, or approximately 6 hours. This process removes any stiffness, making the leaves wonderfully moist and tender.

After soaking, rinse the gondre thoroughly with clean water until the water runs clear. This step helps remove any bitterness or astringency characteristic of the vegetable, resulting in a clean flavor.

Now it’s time to season the namul. First, prepare the green onion for its aromatic flavor. Thinly slice about half a stalk. If you’d like to add some color to the dish, thinly julienne some carrots and add them along with the green onion for a more visually appealing and flavorful salad.

Thinly julienne the half stalk of green onion so it blends well into the salad.

Cut the tender, boiled gondre leaves into bite-sized pieces. Cutting them too small might reduce the enjoyable texture, so aim for moderate-sized pieces.

Combine 3 tablespoons of soy sauce, 1/2 teaspoon of salt, 1 tablespoon of minced garlic, 1 tablespoon of toasted sesame seeds, and 1 tablespoon of sesame oil in a bowl. Mix them well. This ratio of seasoning is not too salty and enhances the natural flavor of the gondre. If you find it’s not seasoned enough for your taste, you can add a little more soy sauce to adjust it.
