Main Ingredients
  • 1 can tuna (135g), drained
  • 1 block (300g) firm tofu, for pan-frying
  • 3 Tbsp canned sweet corn, rinsed
  • 3 Tbsp frozen peas
  • 40g carrot (about 1/5 medium carrot)
  • 3 large eggs
  • 5 Tbsp pancake mix (buchim garu)
  • Cooking oil, for pan-frying

Seasoning & Others
  • 1 Tbsp minced garlic
  • 1 Tbsp fish sauce (e.g., Kkanari Aekjeot)
  • 1 Tbsp sesame oil
  • Pinch of black pepper
  • 1 Tbsp cooking wine (mirin or cheongju)
  • 1 Tbsp toasted sesame seeds
  • 1 tsp salt

Cooking Instructions

Step 1

First, gather all the ingredients needed to make these delicious Tofu Tuna Patties. They are perfect for a satisfying meal or as a special holiday dish.

Step 2

Carrots take longer to cook, so dice them into approximately 0.7cm cubes. To pre-cook them, place them in a microwave-safe dish and heat for about 2 minutes. This ensures the carrots are tender while retaining a slight bite.

Step 3

Rinse the canned sweet corn under running water and drain it well in a sieve. Rinsing helps remove any metallic taste from the can.

Step 4

Thaw the frozen peas by rinsing them under cold water. Squeeze out any excess water thoroughly. Peas add lovely color and texture to the patties.

Step 5

Using a fork or spoon, press down on the canned tuna to drain out as much oil as possible. Removing excess oil will prevent the patty mixture from becoming too wet and result in a tastier patty.

Step 6

Gently press the tofu with your hands to squeeze out some water, but don’t wring it out completely dry. Over-squeezing can make the patties dry; a little moisture will contribute to a softer texture.

Step 7

In a large bowl, combine the drained tuna, pressed and crumbled tofu, prepared carrots, corn, and peas. Add the pancake mix, eggs, minced garlic, fish sauce, sesame oil, toasted sesame seeds, black pepper, cooking wine, and salt. Mix everything together thoroughly until well combined and slightly sticky, like a dough. Knead gently to ensure all ingredients are incorporated.

Step 8

Heat about 3 tablespoons of cooking oil in a non-stick skillet over medium-low heat. Scoop spoonfuls of the mixture and drop them onto the hot pan, shaping them into small patties. The size can be adjusted to your preference. Fry on both sides until golden brown and cooked through. Keep an eye on the heat to prevent burning.

Step 9

Once cooked, transfer the Tofu Tuna Patties to a plate lined with paper towels. This will help absorb any excess oil, making them even more delicious and less greasy.
