  • 1/2 bunch fresh spinach
  • 1/2 medium onion

Seasoning
  • 1 Tbsp salt
  • 1 Tbsp sesame seeds (roasted and crushed)
  • 1 Tbsp minced garlic
  • 2 Tbsp sesame oil

Cooking Instructions

Step 1

First, wash the spinach thoroughly under running water 2-3 times to ensure all dirt is removed. For an extra clean, soak the spinach in water with 1 Tbsp of vinegar for about 5 minutes. This helps to remove any lingering fine dust or bacteria from the leaves.

Step 2

While the roots of spinach are typically not used in namul, they are quite nutritious. You can wash them clean, chop them finely, and freeze them. Store them in an airtight container and add them to fried rice or other stir-fries later for an extra boost of nutrients!

Step 3

Bring a pot of water to a rolling boil. Add 1 tsp of salt to the boiling water. Carefully add the prepared spinach and blanch for about 4 minutes. To ensure even cooking, gently flip the spinach halfway through the blanching time. Be careful not to overcook it, as it can become too soft.

Step 4

Typically, finely chopped scallions and garlic are used for spinach namul. However, today we’re using finely minced onion instead of scallions. Soak the minced onion in cold water for a few minutes to remove its sharpness, then squeeze out all excess water. Adding onion not only provides a pleasant texture but also enhances the natural sweetness of the dish.

Step 5

Gently squeeze any excess water from the blanched spinach and place it in a mixing bowl. Add all the seasoning ingredients: 1 Tbsp salt, 1 Tbsp roasted sesame seeds, 1 Tbsp minced garlic, 2 Tbsp sesame oil, and the prepared minced onion. Gently lift and toss the spinach to combine the seasonings evenly. Avoid over-mixing to keep the spinach from breaking apart.
