Soft and Aromatic Bush Clover Namul Recipe
Golden Recipe for Bush Clover Namul with Chewy Texture and Health Benefits
I made this bush clover namul as part of my effort to eat more greens for weight management. It turned out so soft and delicious that I was worried I might gain weight from eating too much of this too! It’s a fantastic side dish that’s perfect even when you’re dieting.
Main Ingredients
- 3 handfuls of dried bush clover (approx. 30g)
- 1/4 stalk of green onion
Seasoning Ingredients
- 1 Tbsp soy sauce for soup (Guk-ganjang)
- Pinch of salt
- 1/2 Tbsp minced garlic
- 1 Tbsp perilla oil
- Sesame seeds, to garnish

Cooking Instructions
Step 1
First, prepare the dried bush clover. Place 3 handfuls (about 30g) of dried bush clover in a bowl and soak it in lukewarm water for about 30 minutes until fully hydrated. Soaking makes the bush clover tender and easier to cook.
Step 2
After soaking for 30 minutes, the bush clover should be soft enough to mash easily when pressed. Lightly drain the water and set aside.
Step 3
Place the rehydrated bush clover in a pot and add just enough water to cover it. Bring to a boil over high heat, then reduce to medium-low heat and simmer for about 50 minutes until very tender. The longer you simmer, the softer and more delicious the namul will become.
Step 4
Carefully rinse the well-cooked bush clover under cold running water, as it will be hot. Once rinsed thoroughly, squeeze out as much excess water as possible with your hands. Cut the namul into manageable pieces, about three segments each.
Step 5
Now, it’s time to stir-fry with the seasonings. Heat a pan over medium heat and add 1 Tbsp of perilla oil. Add the chopped green onion and 1/2 Tbsp minced garlic, then sauté over low heat until fragrant, being careful not to burn them. This step infuses the oil with the aromatic flavors of garlic and green onion, enhancing the namul’s taste.
Step 6
Add the prepared bush clover to the pan with the fragrant sautéed aromatics. Stir-fry together, seasoning with 1 Tbsp of soy sauce for soup and a pinch of salt to taste. Finally, garnish with some sesame seeds. Your delicious bush clover namul is now complete! Enjoy this soft, flavorful, and healthy side dish.
