As summer arrives, my mother visited and seemed a bit low on energy. So, I prepared a quick and easy stir-fry with crispy bean sprouts, whole garlic cloves, and smoked duck. This dish is packed with flavor and nutrients to help you feel refreshed.
Ingredients
- 300g Smoked Duck
- 250g Bean Sprouts
- 15 cloves Garlic
- 4 Korean Green Peppers (similar to mild chili peppers)
Seasoning
- 1 Tbsp Oyster Sauce
- 1 Tbsp Sesame Oil
- 1/2 Tbsp Minced Garlic
- Pinch of Black Pepper
- 1 Tbsp Toasted Sesame Seeds
- 1 Tbsp Oyster Sauce

Cooking Instructions
Step 1
First, wash 4 Korean green peppers thoroughly. Remove the stems before using.

If the peppers are long, cut them in half lengthwise, and then in half again to create manageable pieces, about 2-3 cm long.

Thinly julienne the cut peppers. Julienne them about 0.5 cm thick for a nice texture when stir-fried.
Step 4
Prepare 15 whole garlic cloves by peeling them. Garlic adds a wonderful aroma and flavor, so don’t be shy with it!

Cut the 300g of smoked duck into bite-sized pieces. If your smoked duck comes in large chunks, trim them down.

Rinse the bean sprouts under cold running water and drain them very well. It’s crucial to remove excess water, as too much moisture can make the stir-fry soggy.

Now, let’s start stir-frying. Heat 2 tablespoons of cooking oil in a frying pan or wok. Add the julienned peppers and the whole garlic cloves.

Sauté them briefly over medium-low heat until fragrant. Push the peppers to the sides and place the whole garlic cloves in the center. Focus on stir-frying the garlic until it turns golden brown and develops a sweet aroma. This step builds a great flavor base.

Once the garlic is nicely browned, add the drained bean sprouts and the smoked duck to the pan. Pour in 1 tablespoon of oyster sauce, 1/2 tablespoon of minced garlic, and a pinch of black pepper. Turn the heat to high and stir-fry quickly until everything is well combined.

The key to this dish is maintaining the crispness of the bean sprouts. Stir-fry just until the bean sprouts start to wilt slightly; then turn off the heat immediately. Overcooking will make them mushy.

After turning off the heat, drizzle in 1 tablespoon of sesame oil for a final touch of fragrance. Adding sesame oil off the heat preserves its delicate aroma.
