Simple Stir-Fried Zucchini Recipe
Super Easy Stir-Fried Zucchini
A side dish you can enjoy simply and sweetly. This recipe is incredibly easy and results in a delicious side dish.
Main Ingredients
- 1 medium zucchini
- 1/2 medium onion
- A little minced garlic (about 1/2 tsp)

- 1 Tbsp sesame oil
- 1.5 Tbsp soy sauce (Korean soup soy sauce or regular soy sauce)

Cooking Instructions
Step 1
First, wash the zucchini and onion thoroughly. Slice the zucchini into bite-sized pieces, about 0.5 cm thick, either in half-moons or lengthwise. Thinly slice the onion. Have your minced garlic ready.
Step 2
Heat a pan over medium heat and add 1 tablespoon of sesame oil. Add the sliced zucchini, onion, and minced garlic to the pan. Stir-fry them together. It’s important not to season from the beginning, allowing the natural sweetness of the vegetables to develop.
Step 3
As the zucchini becomes translucent and the onion starts to soften and turn clear, pour 1.5 tablespoons of soy sauce around the edges of the pan. This allows the soy sauce to caramelize slightly, enhancing its flavor. Quickly stir everything together to combine and finish cooking.
Step 4
This stir-fried zucchini is best when not overcooked. Aim for a slightly crisp-tender texture for both the zucchini and onion – this provides a delightful bite. The natural sweetness of the vegetables, combined with the savory soy sauce, makes this a fantastic side dish for any meal. For an extra touch, sprinkle some toasted sesame seeds on top before serving.
