This is a subtly flavored and refreshing spinach soup. Its tender texture makes it a perfect dish for the whole family to enjoy. A truly comforting and delicious soup that will have everyone asking for seconds!
Main Ingredients
- Fresh spinach 300g
- Soft tofu 250g (1 block)
Soup Seasonings
- Soybean paste (Doenjang) 2 Tbsp
- Soup soy sauce (Guk-ganjang) 5 Tbsp
- Anchovy powder 1 Tbsp
- Mushroom powder for extra flavor (optional)

Cooking Instructions
Step 1
First, let’s prepare the spinach. Remove any yellow or wilted leaves, and then rinse the spinach thoroughly under running water to remove any soil, especially from the roots. Trim the very end of the roots slightly without cutting too much.
Step 2
Fill a pot with plenty of water and bring it to a boil over high heat. Once the water is vigorously boiling, add the whole bunch of cleaned spinach.
Step 3
Once the spinach is lightly blanched, use kitchen scissors to cut it directly in the pot into bite-sized pieces, about 2-3 cm long. This method helps reduce washing up and prevents the spinach from becoming mushy.
Step 4
Now it’s time to season the soup. Add 2 tablespoons of savory soybean paste and 5 tablespoons of flavorful soup soy sauce to the pot, and dissolve them well. Make sure the soybean paste is fully dissolved for a clean soup taste.
Step 5
To deepen the flavor, add 1 tablespoon of anchovy powder. For an extra layer of aroma and taste, sprinkle in some mushroom powder. (You can omit the mushroom powder if you don’t have it.)
Step 6
Dice the tofu into thick cubes, about 1.5 cm. Cut them into manageable pieces so they are easy to pick up with chopsticks and blend well with the soup. Gently add them to the pot.
Step 7
With all the ingredients in the pot, reduce the heat to medium and simmer for about 10 minutes. Once the tofu is cooked through and the flavors have melded beautifully, your delicious spinach soybean paste soup will be ready. Enjoy it with a bowl of rice!
