Cooking Instructions

Step 1

First, prepare 2 onions. It’s good to have plenty for a rice bowl, so feel free to use a bit more. Peel the onions, wash them thoroughly, and slice them into roughly 0.5cm thick strips. This will help reduce their pungency and bring out their natural sweetness.

Step 2

Heat a pan over medium heat and add a generous amount of cooking oil. Add all the sliced onions to the pan. Don’t worry about filling the pan; the onions will shrink down as they cook.

Step 3

Once the onions begin to soften, add the seasoning: 3 tablespoons of soy sauce, 1 tablespoon of corn syrup, 1 tablespoon of cooking wine, and 4 tablespoons of water. Mix well to coat the onions.

Step 4

Now, stir-fry the onions over medium heat until all the seasonings are well combined and the onions start to turn translucent. It’s important to cook them sufficiently to caramelize their natural sugars and develop a deep flavor.

Step 5

As you stir-fry, the onions will become transparent, and a sweet aroma will start to fill the air. At this stage, you can add ingredients like shiitake mushrooms, bacon, or ham for an even richer flavor. Feel free to customize it to your liking!

Step 6

When the onions are fully cooked, caramelized, and have a delicious brown hue, turn off the heat. Just before serving, drizzle in 1 tablespoon of sesame oil and sprinkle with a pinch of black pepper for a glossy finish and enhanced aroma. Spoon the well-cooked onions generously over a bowl of warm rice. Top with a fried or poached egg if desired, and enjoy this wonderful one-bowl meal!
