Main Ingredients
  • 5 sheets of square fish cake
  • 2 eggs
  • 50g green onions
  • 30g red bell pepper
  • 30g yellow bell pepper

Cooking Instructions

Step 1

First, cut the square fish cakes into small, bite-sized square pieces. Bring a pot of water to a boil, add the cut fish cakes, and blanch them for about 1-2 minutes. Blanching helps to remove some of the food additives in the fish cakes, making them safer to consume. After blanching, rinse the fish cakes under cold water and drain them thoroughly.

Step 2

Finely chop the washed green onions. Be careful, as chopping pungent green onions can sometimes make your eyes water! If preparing for children, you might want to adjust the amount of green onion or chop them very finely.

Step 3

Remove the seeds from the red and yellow bell peppers and finely dice them. You can also use other leftover vegetables you have on hand.

Step 4

In a large bowl, combine the drained fish cakes, chopped green onions, and diced bell peppers. Crack in the 2 eggs and mix everything together.

Step 5

Add 1/2 teaspoon of salt to the batter, followed by 6 tablespoons of pancake mix. Mix well until there are no lumps. The consistency of the batter may vary depending on the moisture content of the ingredients. If it’s too thick, add a little water; if it’s too thin, add more pancake mix until you reach your desired consistency.

Step 6

Heat a pan over medium-low heat and add a generous amount of olive oil. Drop spoonfuls of the batter onto the pan to form small, round pancakes. Making them small and round is easier for kids to pick up and eat, and also simpler to flip than one large pancake. Cook until golden brown on both sides, flipping as needed.
