Simple & Delicious Carrot Bibimbap Recipe
Whip up a Delicious Carrot Bibimbap in No Time!
Carrot bibimbap, known for its benefits for night vision, is incredibly delicious, perhaps even more so than bean sprout bibimbap! This recipe is a quick and nutritious way to enjoy a satisfying meal. (Video tutorial follows later in the post.)
Main Ingredients
- 1 large carrot
- 2 servings cooked rice
- 1 Tbsp perilla oil (deul-gireum)
- 1 tsp salt
Flavorful Sauce
- 5 Tbsp soy sauce (jin-ganjang)
- 1/2 Tbsp minced garlic
- 1 Tbsp perilla oil (deul-gireum)
- 2 Tbsp oligosaccharide (or corn syrup)
- 1 Tbsp red pepper flakes (gochugaru)
- 1 Tbsp toasted sesame seeds (ground)
- 1 stalk green onion, finely chopped (optional, for added freshness)

Cooking Instructions
Step 1
First, prepare the carrot by washing it thoroughly and then julienning it into thin strips using a mandoline slicer or a knife. Using a generous amount of carrot will enhance the flavor and texture of your bibimbap, making it even more delicious!
Step 2
Now, let’s make the star of this dish: the flavorful sauce! In a bowl, combine all the ingredients listed under ‘Flavorful Sauce’. Mix them well with a spoon until you have a harmoniously blended sauce, ready to elevate your bibimbap.
Step 3
In a pan, heat 1 tablespoon of perilla oil over medium-low heat. Add the julienned carrots and stir-fry until they begin to soften. Sprinkle in 1 teaspoon of salt and continue to sauté. It’s important not to over-salt at this stage, as the sauce will add saltiness. The carrots should be slightly under-seasoned.
Step 4
Place the warm cooked rice (2 servings) into a bowl. Top generously with the sautéed carrots. Add 2 tablespoons of the prepared sauce and a sprinkle of toasted sesame seeds, then mix everything together thoroughly. The amount of sauce provided is ample for 2 servings, so feel free to adjust it according to the amount of rice or your personal preference.
