  • 300g steak cuts (e.g., sirloin, tenderloin, chuck roll)
  • 1 medium onion
  • 1/2 medium carrot
  • 1 Tbsp butter
  • Herb salt or regular salt to taste

  • 4 Tbsp Tonkatsu sauce
  • 2 Tbsp ketchup
  • 2 Tbsp oyster sauce
  • 2 Tbsp oligodang (corn syrup)

Cooking Instructions

Step 1

First, let’s prepare the ingredients that will make our Beef Steak Bites shine. Any cut of beef suitable for steak can be used. I used chuck roll, which was on sale at Lotte Mart. Onion is essential, and feel free to add any other vegetables you have on hand, like bell peppers or broccoli. Today, I’m using just onion and carrot from my fridge.

Step 2

Next, we’ll create our signature sauce! Measure out 4 Tbsp of Tonkatsu sauce, 2 Tbsp of oyster sauce, 2 Tbsp of ketchup, and 2 Tbsp of oligodang. Combine them in a bowl and mix well. Having the sauce pre-mixed makes the cooking process much smoother. I adapted this from Chef Baek Jong-won’s recipe. While he uses steak sauce, using Tonkatsu sauce from home yielded a very similar delicious result, so feel free to use what you have. Chef Baek also adds minced garlic, but I prefer whole or sliced garlic and enjoy its flavor without the strong scent of minced garlic, so I’ve omitted it. Adjust to your preference!

Step 3

Pat the beef dry with paper towels and season it lightly with herb salt or regular salt. Chop the vegetables into bite-sized pieces, similar in size to the beef cubes.

Alright, all our ingredients are prepped! Now, it’s time to start cooking our delicious Beef Steak Bites.

Melt 1 Tbsp of butter in a heated pan. Add the seasoned beef and stir-fry it quickly over high heat. It’s crucial to sear the beef rapidly on high heat to lock in its juices and prevent it from becoming tough.

Once the beef is nicely browned, add all the chopped onion and carrot to the pan. Continue to stir-fry everything together. Cooking over high heat helps maintain the crispness of the vegetables.

Step 7

Stir well to combine the vegetables and beef. Now, pour in the pre-made sauce. Toss everything gently to ensure the sauce coats all the ingredients evenly.

Step 8

Continue stir-frying over high heat for about 1-2 minutes, allowing the sauce to meld beautifully with the ingredients. When the onions become translucent, turn off the heat. The residual heat in the pan will continue to cook the vegetables. Sprinkle with toasted sesame seeds for a final touch, and your Beef Steak Bites are ready!
