Homemade Hearty Odeng Tang: The Secret to a Deliciously Spicy Broth!
Discover the secret to a simple Odeng Tang (fish cake soup) with a milky, refreshing, yet spicy broth, achieved without chili powder or peppers! Perfect for a cozy meal.
Main Ingredients
- 1 bag assorted fish cakes (small size)
- 1/4 portion daikon radish
- 1 handful dried anchovies for broth
- 5-6 sheets dried kelp (small size)
- 2 Tbsp chili seeds
- 1 handful green onions (mostly white parts)
- 4g bonito flakes (katsuobushi)
Seasoning
- 2 Tbsp soup soy sauce (guk-ganjang)
- 1 tsp tuna extract
- 2 Tbsp soup soy sauce (guk-ganjang)
- 1 tsp tuna extract
Cooking Instructions
Step 1
To create the flavorful broth, place the dried anchovies, dried kelp, and the secret ingredient for the spicy kick, chili seeds, into a broth bag. In a pot, add 3 liters of water (for reference) and the broth bag. Bring to a rolling boil over high heat for 10 minutes to extract a rich stock.
Step 2
While the broth is simmering, thoroughly wash and peel the daikon radish. Slice it thinly into bite-sized, half-moon shapes (nabak-style). Avoid making the slices too thick, as this will affect cooking time.
Step 3
Once the broth has boiled for 10 minutes and is rich in flavor, remove the broth bag. Add the sliced daikon radish to the pot and cook until the radish becomes translucent and tender.
Step 4
Cut the assorted fish cakes into bite-sized pieces, about 3-4 cm in length. You can thread them onto skewers if you prefer, or add them directly to the pot.
Step 5
After the radish has cooked sufficiently, add the cut fish cakes to the pot. Season with 2 tablespoons of soup soy sauce and 1 teaspoon of tuna extract for depth of flavor and saltiness. Once the soup returns to a rolling boil, reduce the heat to medium and simmer for about 5 more minutes, allowing the fish cakes to absorb the flavors.
Step 6
Finally, add the 4g of bonito flakes and the chopped green onions (mainly the white parts) and simmer for another 1-2 minutes. The bonito flakes add umami, while the green onions contribute a refreshing taste. This completes your unique Odeng Tang, featuring a milky broth with a surprising spicy zest, all without chili powder. Enjoy this delightful soup!
