  • 1/2 onion
  • 10cm green onion (chopped)

Seasoning
  • 0.5 tsp soy sauce
  • 0.5 tsp sugar
  • 0.5 tsp oyster sauce
  • 0.5 tsp sesame oil
  • 0.5 tsp sesame seeds

Cooking Instructions

Step 1

First, wash the 2 eggplants thoroughly, pat them dry, and then slice them diagonally about 0.7-1cm thick. Slicing them too thinly might cause them to break apart while stir-frying, so aim for a moderate thickness. Slice the 1/2 onion thinly.

Step 2

Heat 2 tsp of cooking oil in a pan over medium-low heat. Add the sliced onion first and stir-fry until it becomes translucent to release its aroma. Then, add the sliced eggplant and stir-fry until the eggplant is slightly softened. It’s important to stir occasionally to prevent the eggplant from sticking to the pan.

Step 3

Once the eggplant is tender, it’s time to add the seasonings. Add 0.5 tsp of oyster sauce and 0.5 tsp of soy sauce. Be cautious with the soy sauce as it can be salty depending on the brand; it’s recommended to start with a small amount and add more after tasting. Next, add 0.5 tsp of sugar and stir-fry until all ingredients are well combined.

Step 4

Add the chopped green onion and stir-fry for another minute to enhance the aroma. Finally, add 0.5 tsp of sesame oil and 0.5 tsp of sesame seeds for a nutty finish. Your delicious stir-fried eggplant is now complete.
