Main Ingredients
  • 80g Fresh Oysters
  • 100g Radish (for a refreshing taste)
  • 2 handfuls of chopped green onions
  • 1 tsp Garlic Powder (or minced garlic)
  • 0.5 tsp Salted Shrimp
  • 1/4 Korean chili pepper, seeded and finely chopped
  • 1 sheet of Kelp for broth (optional)
  • 280g Hot Water (freshly boiled)
  • 0.5 Tbsp Soy Sauce for soup
  • Pinch of black pepper (to taste)
  • 0.25 tsp Ginger Powder (or minced ginger)
  • 1 tsp Flour (for cleaning oysters)

Cooking Instructions

Step 1

First, prepare 100g of radish, which will add a refreshing taste. Slice it thinly into bite-sized pieces, about the thickness of a spoon. Thin slices help the radish cook faster and release its refreshing flavor into the broth.

Step 2

Place all the sliced radish into the rice cooker. Season with 0.5 Tbsp of soy sauce for soup, add 0.5 tsp of salted shrimp for a deeper umami flavor, and the finely chopped 1/4 Korean chili pepper for a touch of heat. Add the kelp sheet (optional, but recommended for richer flavor) and stir in 1 tsp of garlic powder and 0.25 tsp of ginger powder. If you prefer a spicier kick, feel free to increase the amount of Korean chili pepper to half a piece.

Step 3

Pour 280g of freshly boiled hot water from a kettle into the rice cooker. Give it a gentle stir to combine the ingredients, then select the ‘reheat’ or ‘cook’ function on your rice cooker and set it to cook for 9 minutes. Using hot water helps the ingredients cook more quickly and results in a cleaner-tasting broth.

Step 4

While the broth is cooking in the rice cooker, prepare 80g of fresh oysters. To remove any impurities, gently toss the oysters with 1 tsp of flour. The flour helps to absorb and cling to any surface debris, making them easier to rinse clean.

Step 5

After coating the oysters with flour, rinse them gently under cold running water. Be careful not to break the oysters; rub them lightly with your hands while washing. Thoroughly cleaning the oysters this way prevents any unpleasant fishy taste in the soup, ensuring a clean and enjoyable flavor.

Step 6

Once the rice cooker’s 9-minute reheat cycle is complete, carefully add the cleaned oysters to the pot. Oysters can become tough if overcooked, so run the ‘reheat’ or ‘cook’ function again for just 9 minutes. The oysters will release their delicate flavor into the broth as they cook.

Step 7

Finally, generously add the 2 handfuls of chopped green onions. The fresh, mild aroma of the green onions will enhance the broth’s flavor. For an extra touch, sprinkle a pinch of black pepper according to your preference. Enjoy this comforting soup with a bowl of warm rice!
