Main Ingredients
- 1 bunch scallions (cleaned and trimmed)
- 1 can Spam (approx. 200g)
- 1 large egg
- 2 chili peppers (optional, for a touch of heat)
- 1 cup all-purpose flour (approx. 120g)
- 1 cup cold water (approx. 200ml)
Dipping Sauce
- 1 Tbsp soy sauce
- 2 Tbsp vinegar
- Pinch of red pepper flakes (or sesame seeds)
- 1 Tbsp soy sauce
- 2 Tbsp vinegar
- Pinch of red pepper flakes (or sesame seeds)
Cooking Instructions
Step 1
First, open half of the Spam can and place it into a zip-top bag. Mash the Spam using a rolling pin or your hands. It’s best to leave some small chunks for texture, rather than mashing it into a paste.
Step 2
In a large bowl, combine 1 cup of all-purpose flour with 1 cup of cold water. Whisk until smooth and there are no lumps. A 1:1 ratio of flour to water creates a good batter consistency. Too thin, and it will be difficult to cook; too thick, and the pancake may become tough.
Step 3
Add the mashed Spam to the flour batter and mix well. Ensure the Spam pieces are evenly distributed and not clumped together. The flour mix usually has some seasoning, and the Spam is salty, plus you’ll have a dipping sauce, so no extra salt is needed.
Step 4
Cut the cleaned scallions into roughly 3-4 cm (about 1.5 inches) pieces and add them to the batter. The fresh, aromatic scallions will enhance the pancake’s flavor.
Step 5
If you like a little heat, finely chop 2 chili peppers (red or green) and add them to the mixture. The subtle spiciness cuts through richness and awakens the palate. You can omit this step if you prefer.
Step 6
Finally, crack in 1 large egg and gently mix everything together until well combined. The egg helps make the pancake tender and gives it a lovely golden hue when cooked.
Step 7
Your Spam and Scallion Pancake batter is now ready to cook! It should look appealing and well-mixed.
Step 8
Heat a frying pan over medium heat and add a generous amount of cooking oil. Ladle about half a cup of batter onto the hot pan and spread it out thinly. Making the pancake too thick can result in uneven cooking and a soggy texture.
Step 9
Maintaining medium heat is crucial. If the heat is too high, the outside will burn before the inside is cooked. If the heat is too low, the pancake will absorb too much oil and become greasy. Cook gently over medium heat.
Step 10
Once the edges of the pancake look golden brown and crispy, carefully flip it over to cook the other side until it’s also golden brown and cooked through. Your delicious Spam and Scallion Pancake is ready! For the dipping sauce, mix 1 Tbsp soy sauce, 2 Tbsp vinegar, and a pinch of red pepper flakes. Alternatively, you can use sesame seeds instead of red pepper flakes for a nutty flavor. Enjoy your homemade pancake!
