After making some intensely spicy mandu, I wanted something to soothe my palate, and what better than a clean, comforting bowl of tteokguk (rice cake soup)? This version uses the convenient Sempiyo Vegetable Broth for a quick and healthy meal. While I often enjoy anchovy-kelp broth, I also love homemade vegetable broth made with cabbage cores, scallion roots, and shiitake stems. This recipe uses the pre-made vegetable broth to whip up a delicious tteokguk in no time, perfect for a light yet satisfying meal.
Tteokguk Ingredients
- 3 cups Tteokguk rice cakes (approx. 450g)
- 2 packets Sempiyo Vegetable Broth
- 1L water (4 cups)
- 1 Tbsp minced garlic (or 2 cloves garlic, thinly sliced)
- 1 Tbsp chopped green onion
- 1 Tbsp soup soy sauce (Gukganjang)
- 2 eggs
- 1 tsp salt (for seasoning adjustment)
Cooking Instructions
Step 1
The packaging indicates that each packet of Sempiyo Vegetable Broth is designed for 500ml of water. Therefore, using 2 packets with 1L of water will yield a generous amount of broth for your tteokguk. The broth itself is quite clean and savory, so it doesn’t require much additional seasoning. However, feel free to adjust to your taste. For a richer flavor, you could add a bit of doenjang (soybean paste) for a hearty tteokguk, or stick with the clear, savory soy sauce version. Experiment to find your perfect taste!
Step 2
In a pot, combine 1L of water and the 2 packets of Sempiyo Vegetable Broth. Bring this mixture to a rolling boil over high heat. This forms the clean and flavorful base for your tteokguk.

Once the broth is boiling, add your aromatics. Stir in 1 tablespoon of minced garlic, or for a slightly different texture, you can use 2 cloves of garlic thinly sliced into slivers. Then, add the chopped green onion for a fresh, aromatic touch.

It’s best to start with 1 tablespoon and then adjust the final taste with salt as needed, ensuring the rice cakes are soft and the broth remains clear.

Finally, gently pour the 2 beaten eggs in a circular motion over the simmering soup. Allow the eggs to cook and set, creating delicate ribbons or swirls in the broth. For an extra touch of flavor and aroma, a sprinkle of black pepper and a light drizzle of sesame oil can be added just before serving.
