Cooking Instructions

Step 1

First, prepare half an onion by slicing it thinly into strips. Sliced onions blend well with the eggplant when stir-fried, adding sweetness and depth of flavor.

Step 2

Wash the 2 eggplants thoroughly, then cut them into 5cm lengths. Afterward, divide each length into 6 pieces to create bite-sized portions. This size helps the seasoning penetrate well and makes them easy to eat.

Step 3

In a small bowl, combine 1.5 Tbsp soy sauce, 0.5 Tbsp minced garlic, 1 Tbsp chopped green onion, and 0.5 Tbsp sesame oil. Mix them well to create a delicious seasoning sauce. Preparing the sauce in advance can shorten your cooking time.

Step 4

Heat a pan with a generous amount of cooking oil. Add the prepared eggplant and sliced onion. Sprinkle a pinch of salt for initial seasoning, then stir-fry over medium-low heat for about 2 minutes until the eggplant becomes slightly translucent. Be careful not to overcook the eggplant until it’s too mushy.

Step 5

Once the vegetables are somewhat cooked, add the prepared seasoning sauce. Continue to stir-fry for another 1-2 minutes, ensuring the seasoning coats all the ingredients evenly.
