Cooking Instructions

Step 1

Begin by preparing the Silver Pomfret. If your fish isn’t already cleaned, rinse it under cold water. Carefully trim off the fins near the tail and the sides using scissors. Then, make a shallow cut along the belly and gently remove the internal organs. Rinse the cavity thoroughly. (Note: I used pre-cleaned fish for this recipe).

Step 2

Place the prepared fish in a bowl. Sprinkle with the coarse sea salt and pour over the soju. The soju is crucial for tenderizing the fish and neutralizing any potential fishy odors. Let the fish marinate for at least 30 minutes in the refrigerator.

Step 3

After 30 minutes, gently rinse the fish under cold running water to wash off the excess salt. Pat the fish completely dry with paper towels. Ensuring the fish is thoroughly dry is key to achieving a beautifully crispy exterior and preventing oil splatters during cooking.

Step 4

Heat a frying pan over medium heat. Add the cooking oil and the perilla oil. Perilla oil adds a wonderful nutty flavor and aroma, complementing the fish beautifully.
