First, prepare all the ingredients for your shrimp fried rice. It’s best to use warm rice, as it will help achieve a fluffy texture and prevent the fried rice from clumping.

Finely chop the green onion. In a separate bowl, whisk the eggs, optionally adding a tiny pinch of salt for a richer flavor in your scrambled eggs.

How to prepare the shrimp: First, remove the heads from the shrimp. Next, peel off the shells. Then, using a toothpick or the tip of a knife, carefully devein the shrimp by making a shallow cut along the back and removing the dark intestinal tract. This step ensures a tender and cleaner bite.
