- Cooking Wine (Mirin or Rice Wine): 2 Tbsp
- Minced Garlic: 0.5 Tbsp (approx. 1/2 tsp)
- Water: 2 paper cups (approx. 360ml)
- Soy Sauce: 10 Tbsp
- Sugar: 1 Tbsp
- Oligosaccharide (or corn syrup): 4 Tbsp
- Cooking Wine (Mirin or Rice Wine): 2 Tbsp
- Minced Garlic: 0.5 Tbsp (approx. 1/2 tsp)
- Water: 2 paper cups (approx. 360ml)
Cooking Instructions
Step 1
First, prepare the radish by cutting it into uniform pieces about 1.5cm thick. You can cut them into rounds, half-moons, or squares – whichever shape you prefer. Cutting them into smaller pieces is also great for children.
Step 2
Now, let’s make the braising sauce base in a deep pot. Add 10 Tbsp of soy sauce, 2 Tbsp of cooking wine, 1 Tbsp of sugar, and 4 Tbsp of oligosaccharide. Oligosaccharide adds a lovely sheen and a subtle sweetness.
Step 3
Next, add the aromatics and flavor enhancers to the sauce. For a clean, mild spiciness, add 5 peperoncino peppers. You can add chili peppers according to your preference. Also, include 0.5 Tbsp of minced garlic for depth of flavor.
Step 4
Add the clean shiitake mushrooms to the pot. Their fragrant aroma will enrich the braise. Finally, pour in 2 paper cups (about 360ml) of water to ensure all ingredients are sufficiently submerged.
Step 5
Add all the prepared radish pieces to the pot. All the ingredients are now in! It’s incredibly simple, isn’t it? This delicious braised shiitake mushroom and radish dish is almost ready.
Step 6
Bring the mixture to a boil over medium-high heat, then reduce to medium-low. Let it simmer for about 15-20 minutes, allowing the flavors to meld and the radish to absorb the sauce. Once the liquid has reduced and the radish becomes slightly translucent, lower the heat to low and continue to braise gently until the radish is completely tender and the sauce has thoroughly penetrated the ingredients. This may take 30 minutes or more, so check the tenderness of the radish and adjust the cooking time accordingly.
Step 7
And there you have it! A ‘rice thief’ featuring chewy shiitake mushrooms and sweet radish, all coated in a delicious soy sauce glaze. Serve hot over a bowl of steamed rice and enjoy!
