Growing up with a mother who adored seasonal radishes, I was constantly encouraged to eat radish rice, radish soup, and braised radishes every autumn. I might have grumbled back then, but looking back, we were truly blessed with abundance. When was the last time someone cooked for you…? As autumn deepens, I find myself yearning for those days even more. This recipe brings back those warm memories with the sweetness of seasonal radishes and the nutty aroma of toasted sesame oil.

Main Ingredients
  • 180g short-grain rice
  • 70g glutinous rice
  • 170g warm water
  • 160g radish

Seasoning Ingredients
  • 15g toasted sesame oil
  • 3g brewed soy sauce

Cooking Instructions

Step 1

First, precisely measure out the short-grain rice and glutinous rice. The exact rice quantity is crucial for perfect rice, so ensure accurate measurement.

Step 2

Place the measured rice in a bowl and rinse it gently several times until the water runs clear. Drain the rice and set it aside in a sieve to remove excess water. Your rice is now ready for cooking.

Step 3

Pour the measured 170g of warm water over the rinsed rice. Let it soak for 10 minutes, allowing the rice to absorb the water fully. While the rice is soaking, proceed with preparing the other ingredients.

Step 4

For radish rice, you’ll need less water than you would for regular rice. This is because radishes release a significant amount of moisture when cooked. Be sure to adhere to the measured water amount.

Step 5

Getting the ratio of water to radish right is key to preventing the rice from becoming mushy. Considering the moisture content of the radish, using less water than usual is important.

Step 6

Peel the radish and julienne it into strips approximately 0.4cm thick. If you cut it too thinly, the radish might lose its texture and appeal when cooked. Cutting it to a moderate thickness is recommended.

Step 7

On top of the rice that has been soaking for 10 minutes, pour all 15g of the toasted sesame oil. Adding the sesame oil before the water helps to coat each grain of rice with a delicious, nutty flavor.

Step 8

Drizzle the sesame oil evenly over the rice. As the water boils, the sesame oil will naturally blend with the rice. You can simply pour it directly over the water.

Step 9

Arrange the julienned radish evenly over the water. As the radish cooks with the rice, it will add a wonderful savory depth of flavor.

Step 10

Add only 3g of soy sauce. This amount of soy sauce is for seasoning the overall dish. If it tastes bland later, you can mix it with a dipping sauce. Be careful not to add too much, as it could make the rice too salty.

Step 11

Now, place the rice cooker (or pot) on the stove. With the lid off, bring it to a boil over high heat. After about 5 minutes of high heat, the water should start bubbling vigorously. When the water on the surface of the rice has almost evaporated and only bubbles are appearing, reduce the heat to the lowest setting and cover the pot with the lid.

Step 12

Let it steam over the lowest possible heat for 25 to 30 minutes. During this time, the rice grains will cook to a fluffy texture, and the radish’s natural sweetness will infuse into the rice.

Step 13

As soon as the steaming is finished, immediately open the lid and gently fluff the rice with a spoon. This step is crucial to prevent the rice from becoming sticky and to maintain its fluffy texture.

Serve the perfectly cooked radish rice in bowls. You can mix it with your favorite dipping sauce or enjoy it with delicious side dishes, like fresh marinated crab, for a truly delightful meal. It’s absolutely delicious!
