- Gochujang (Korean chili paste), 2 Tbsp
- Sugar, 2 Tbsp
- Vinegar, 2 Tbsp
- Sesame oil (for sauce), 1 Tbsp
- Minced garlic, 1 Tbsp
- Toasted sesame seeds, a pinch (adjust to taste)
Cooking Instructions
Step 1
First, wash the perilla leaves thoroughly under running water and pat them dry. If using seasoned seaweed laver (Gim), it can be used as is, or you can lightly toast it for a richer flavor. Thinly julienne both the perilla leaves and the seaweed. The thinner the cut, the better they will integrate with the noodles for a pleasant texture.
Step 2
Now, it’s time to cook the noodles. Bring a large pot of water to a rolling boil. Add the somen noodles for 2 servings and cook according to package directions, or for about 2 minutes less if you prefer a chewier texture. Drain the noodles and rinse them under cold water to remove excess starch, ensuring they are well-drained. Place the drained noodles in a bowl and add 3 tablespoons of sesame oil. Gently toss the noodles to coat them evenly, preventing them from sticking together. Ensure the noodles are well-coated with the fragrant sesame oil.
Step 3
Once the noodles are ready, add the julienned perilla leaves and crumbled seaweed to the bowl. Gently toss everything together with the sesame oil-coated noodles until well combined. The fresh aroma of perilla leaves and the savory taste of seaweed will create a rich flavor profile.
Step 4
Next, prepare the sauce. In a small bowl, combine 2 tablespoons of gochujang, 2 tablespoons of sugar, 2 tablespoons of vinegar, 1 tablespoon of sesame oil, and 1 tablespoon of minced garlic. Stir well until all ingredients are evenly incorporated. You can adjust the ratio of sugar and vinegar to your preference. Taste the sauce separately and adjust the sweetness or sourness to suit your palate for an even more delicious dish.
Step 5
Finally, top the well-mixed sesame oil noodles with your desired amount of the prepared sauce. Sprinkle with toasted sesame seeds for an extra nutty flavor and visual appeal. The combination of the aromatic sesame oil and the sweet and spicy sauce creates a truly delightful meal. You’ll be amazed by its simple yet exquisite taste!
