As the summer heat truly begins to set in, you can’t help but crave refreshing noodle dishes! That’s why I’ve prepared ‘Yeolmu Bibim Guksu’ for you to enjoy as a delightful treat. If you have some well-fermented yeolmu kimchi (young radish kimchi) on hand, you can whip this up in no time without needing many extra ingredients. I initially wanted to make yeolmu bibimbap with barley rice, but alas, I didn’t have any barley rice, so I opted for noodles today. But don’t worry! Thanks to the signature refreshing and crunchy taste of yeolmu kimchi, the noodles were absolutely delicious. I even served some pan-fried dumplings on the side, thinking my eldest son might want more, but he ended up eating all the noodles and leaving the dumplings untouched – it was that popular! Yeolmu Bibim Guksu is wonderfully easy to mix and enjoy with just yeolmu kimchi. Make some and have a refreshing afternoon~♡

Main Ingredients
  • Noodles for 2 servings
  • 1 cup well-fermented Yeolmu Kimchi
  • 1 boiled egg (for garnish)

Seasoning
  • 1 Tbsp Gochujang (Korean chili paste)
  • 3 tsp Sugar
  • A pinch of Sesame seeds
  • A drizzle of Sesame oil

Cooking Instructions

Step 1

First, bring a generous pot of water to a rolling boil. Using plenty of water is crucial to prevent the noodles from sticking together.

Step 2

Once the water is boiling, add a few drops of grapeseed oil or any cooking oil. This helps the noodles cook up with a pleasant, chewy texture. Then, add the noodles to the boiling water.

Step 3

When the water with the noodles comes back to a boil, cook them according to the package instructions or until they reach your desired tenderness. Immediately rinse the cooked noodles under cold running water to remove excess starch, and then drain them thoroughly in a colander. This step ensures the noodles are springy and firm.

Step 4

In a bowl, combine the drained noodles with the yeolmu kimchi and all the seasoning ingredients (gochujang and sugar). Gently mix everything together until the noodles are well coated. Including some of the yeolmu kimchi brine will add extra flavor and moisture.

Step 5

Transfer the mixed yeolmu bibim guksu to a serving bowl. For an even more satisfying and visually appealing dish, you can add toppings like sliced boiled egg, julienned cucumber, or shredded lettuce. Finish with a sprinkle of sesame seeds and a drizzle of sesame oil for added aroma and flavor.
