Ingredients
- 1kg scallops
- 5-6 cloves garlic
- 20g butter
- 150ml sake (or soju/white wine)
- A pinch of red chili flakes (peperoncino)
- 2 Tbsp cooking wine (mirin)
- 1 green chili pepper
- 1 red chili pepper
- 1/4 lemon
- A little bit of green onion
- A pinch of salt
- A pinch of black pepper
Cooking Instructions
Step 1
First, wash the scallops thoroughly by scrubbing them with a toothbrush or a scrubbing brush to remove any dirt or grit.
Step 2
Scallops often have impurities hidden within their shells, so scrubbing them vigorously under running water will ensure they are perfectly clean. Rinse until the water runs clear.
Step 3
Thinly slice the garlic. If using, finely chop the green onion, green chili, and red chili pepper for added color and aroma. (For a spicier kick, increase the amount of green chili or remove the seeds).

Place the butter in a pot or deep pan.

Once the butter has melted, add the sliced garlic and sauté over medium-low heat. Cook gently until the garlic releases its fragrant aroma, being careful not to burn it. Lightly browning the garlic will enhance its flavor.

Add red chili flakes to your liking for a touch of heat. I personally enjoy a bit of spice, so I added a generous pinch, which gave it a wonderfully spicy kick!

Arrange the cleaned scallops in the pot. Pour the sake (or soju/white wine) and cooking wine over the scallops.

Cover the pot with a lid and cook over medium heat until the scallop shells have opened, which should take about 5-7 minutes. Be sure to monitor them, as overcooked scallops can become tough.

Once the scallops have opened, remove the lid. Sprinkle the chopped green onion, green chili, and red chili pepper over the top for a burst of color and freshness.
