I found some chicken drumettes in my freezer and wondered what to make that would satisfy the whole family?! So, I decided to make a soy sauce braised dish~^^

Main Ingredients
  • 500g Chicken drumettes

Seasoning Ingredients
  • 5 Tbsp Hongge soy sauce or regular soy sauce
  • 2 Tbsp Mirin (rice wine)
  • 1.5 Tbsp Cooking oil
  • 3 Tbsp Agave syrup (or corn syrup/honey)
  • 1 Tbsp Minced garlic
  • A pinch of sesame seeds

Cooking Instructions

Step 1

Wash the chicken drumettes thoroughly. Blanch them in boiling water for about 1-2 minutes to remove impurities and any unwanted smell. Rinse the blanched drumettes under cold water and drain well. Heat 1.5 Tbsp of cooking oil in a pan over medium heat. Add the drumettes and pan-fry for 2-3 minutes until the surfaces are lightly golden brown. Lightly searing the drumettes helps them maintain their shape and adds a delicious texture during braising.

Step 2

Once the drumettes are lightly browned, add all the seasoning ingredients: 5 Tbsp soy sauce, 2 Tbsp mirin, 3 Tbsp agave syrup, and 1 Tbsp minced garlic. Stir well to ensure the sauce coats the drumettes evenly. Bring the mixture to a boil over medium-high heat, then reduce the heat to medium-low. Braise the drumettes, allowing the sauce to thicken and coat the chicken. Stir occasionally to prevent sticking and ensure even coating.

Step 3

Continue to braise until the sauce has reduced and coats the drumettes with a glossy sheen. Turn off the heat. Transfer the braised drumettes to a serving plate. Garnish with a sprinkle of sesame seeds for a finishing touch. For an even more concentrated and chewy texture, reduce the sauce until it’s almost completely absorbed by the drumettes. (Tip: If the sauce becomes too thick, add a little water.)
