  • 1 bunch sweet potato greens (approx. 300-400g)
  • 1 tsp coarse salt (for blanching)

Seasoning Ingredients
  • 2 Tbsp grapeseed oil or cooking oil
  • 1 tsp gochugaru (Korean chili flakes, adjust to taste)
  • 2 tsp tuna extract (for umami)
  • 1 tsp anchovy sauce (for depth of flavor)
  • 1 tsp minced garlic
  • A pinch of toasted sesame seeds (for nutty flavor)
  • A bit of chopped green onion (for freshness)

Cooking Instructions

Step 1

First, use scissors to neatly trim off the leaves from the sweet potato greens. Removing the leaves attached to the stems can improve the texture when stir-frying later.

Step 2

Fill a pot with plenty of water and bring it to a rolling boil over high heat.

Step 3

Once the water is boiling, add 1 teaspoon of coarse salt and the prepared sweet potato greens. Blanch for about 3-5 minutes until they become tender. Be careful not to over-blanch, as they can become mushy.

Step 4

Immediately rinse the blanched sweet potato greens under cold water to cool them down. Then, gently peel the skin from the stem ends by hand; you’ll find it comes off much more easily than you might expect. Lightly squeeze out excess water from the peeled greens.

Step 5

Heat 2 tablespoons of grapeseed oil in a deep pan or wok over medium-high heat. Add the drained sweet potato greens and stir-fry for 2-3 minutes. Coating the greens in oil will make them even more tender.

Step 6

Once the sweet potato greens are somewhat stir-fried, add 1 teaspoon of gochugaru, 2 teaspoons of tuna extract, 1 teaspoon of anchovy sauce, and 1 teaspoon of minced garlic. Stir well to ensure the seasonings are evenly distributed, cooking over medium heat. Be mindful not to cook over excessively high heat to prevent burning.

Step 7

Finally, add the chopped green onions and toasted sesame seeds, stir-fry briefly for another moment, then turn off the heat. Serve the finished stir-fried sweet potato greens beautifully on a plate for a delicious side dish!
