- 2 Tbsp grapeseed oil or cooking oil
- 1 tsp gochugaru (Korean chili flakes, adjust to taste)
- 2 tsp tuna extract (for umami)
- 1 tsp anchovy sauce (for depth of flavor)
- 1 tsp minced garlic
- A pinch of toasted sesame seeds (for nutty flavor)
- A bit of chopped green onion (for freshness)
- 2 Tbsp grapeseed oil or cooking oil
- 1 tsp gochugaru (Korean chili flakes, adjust to taste)

Cooking Instructions
Step 1
First, use scissors to neatly trim off the leaves from the sweet potato greens. Removing the leaves attached to the stems can improve the texture when stir-frying later.

Fill a pot with plenty of water and bring it to a rolling boil over high heat.

Once the water is boiling, add 1 teaspoon of coarse salt and the prepared sweet potato greens. Blanch for about 3-5 minutes until they become tender. Be careful not to over-blanch, as they can become mushy.

Immediately rinse the blanched sweet potato greens under cold water to cool them down. Then, gently peel the skin from the stem ends by hand; you’ll find it comes off much more easily than you might expect. Lightly squeeze out excess water from the peeled greens.

Heat 2 tablespoons of grapeseed oil in a deep pan or wok over medium-high heat. Add the drained sweet potato greens and stir-fry for 2-3 minutes. Coating the greens in oil will make them even more tender.
