Savory Stir-fried Dried Hairtail
A Nutty and Delicious Dried Hairtail Stir-fry, a Perfect Side Dish
Introducing a truly delightful dried hairtail stir-fry, perfect as a banchan (side dish) or even as a satisfying accompaniment to your drinks. Made with fresh dried hairtail purchased from Jungbu Market, this dish boasts a savory and sweet glaze that evenly coats the fish, making it irresistible with rice or even delicious on its own. While it can be made spicy, today we’re focusing on bringing out its subtle nutty flavors for a light and enjoyable meal. It’s a true rice thief!
Ingredients
- 100g dried hairtail
- 2 Cheongyang peppers (spicy Korean chili peppers)
- 1 Tbsp soy sauce
- 1 Tbsp anchovy sauce (fish sauce)
- 1/3 Tbsp ginger powder or ginger juice
- 3 Tbsp honey
- 3 Tbsp olive oil
- 1 Tbsp toasted sesame seeds
- 1 Tbsp sesame oil
Cooking Instructions
Step 1
Cut the long dried hairtail into bite-sized pieces. If you buy it in a box, it’s convenient to portion it out and freeze it in 100g packs, making it easy to use whenever you need it.
Step 2
Now, let’s start making the dried hairtail stir-fry. Heat a dry pan and add the dried hairtail. Stir-fry it gently to remove any gamey odor and enhance its savory aroma. Once cooked, transfer the stir-fried hairtail to a separate bowl.
Step 3
In the same pan, add 3 Tbsp of olive oil, 1 Tbsp of soy sauce, 1 Tbsp of anchovy sauce, 3 Tbsp of honey, and 1/3 Tbsp of ginger juice or powder. You can substitute honey with corn syrup or rice syrup. Using low-sodium anchovy sauce can help adjust the saltiness. If you don’t have ginger, feel free to omit it. (No worries if it’s missing!)
Step 4
Once the sauce begins to bubble, add the stir-fried dried hairtail back into the pan. Mix well to ensure the sauce evenly coats the fish, stirring constantly to prevent sticking.
Step 5
When the hairtail is well coated with the sauce, turn off the heat. Add 1 Tbsp of sesame oil and mix gently. After it cools down slightly, stir in 1 Tbsp of toasted sesame seeds and the finely chopped Cheongyang peppers for added flavor and texture.
