Doenjang Seasoning
- 1 Tbsp coarse salt (for blanching spinach)

- 1 Tbsp sesame oil (Korean sesame oil recommended for its rich aroma)
- 1 Tbsp sesame seeds (whole or toasted)
- 1 Tbsp doenjang (Korean soybean paste – homemade or store-bought, adjust to taste)

Cooking Instructions
Step 1
First, bring a generous pot of water to a rolling boil over high heat. Once the water is boiling vigorously, add 1 Tbsp of coarse salt. Adding salt helps the spinach maintain its vibrant green color and achieve a crisp texture.
Step 2
Add the thoroughly cleaned and trimmed spinach to the boiling water. It’s a good idea to submerge the root ends first.
Step 3
Blanch the spinach for no more than 1 minute. It’s crucial to cook it briefly to preserve its fresh taste and nutrients. Be careful not to overcook it. Gently tossing the spinach halfway through ensures that both the stems and leaves are evenly blanched.
Step 4
Immediately transfer the blanched spinach to cold running water to cool it down. This step helps retain the spinach’s crispness and enhances its bright green color. Gently swirl the spinach in the cold water, then carefully press out as much excess water as possible with your hands. Leaving too much water can dilute the seasoning.

In a mixing bowl, combine all the doenjang seasoning ingredients: 1 Tbsp minced garlic, 1 Tbsp sesame oil, 1 Tbsp sesame seeds, and 1 Tbsp doenjang. Add the squeezed spinach and the finely chopped green onions to the seasoning mixture.
