Main Ingredients
  • 200g Vienna sausages (about 10-12 sausages)
  • 40g red bell pepper (about 1/4 pepper)
  • 38g yellow bell pepper (about 1/4 pepper)
  • 55g onion (about 1/4 onion)
  • 2 Tbsp ketchup
  • 0.7 Tbsp soy sauce (or oyster sauce, approx. 2/3 Tbsp)
  • 2 Tbsp olive oil
  • A sprinkle of sesame seeds (for garnish)

Blanching the Sausages

Cooking Instructions

Step 1

Make 3-4 shallow cuts on each Vienna sausage. This not only makes them look appealing when cooked but also helps the sauce penetrate better for a richer flavor.

Step 2

Wash the bell peppers and onion, remove the seeds from the peppers, and chop them into bite-sized pieces (approximately 1.5cm x 1.5cm). Uniformly sized vegetables cook evenly.

Step 3

Pour 600ml of water into a pot and bring it to a rolling boil over high heat. Once the water is boiling vigorously, carefully add all the prepared Vienna sausages.

Step 4

After the water returns to a boil, reduce the heat to medium. Blanch the sausages for about 1-2 minutes, or until the cuts start to open slightly. Avoid boiling over high heat as it can cause the cuts to spread too much. Turn off the heat once blanched.

Step 5

Drain the blanched sausages in a colander and rinse them under cold running water to quickly cool them down. This helps them maintain a firm, springy texture.

Step 6

In a large stir-fry pan, combine the chopped bell peppers and onion. Drizzle with 2 Tbsp of olive oil and toss to coat the vegetables evenly.

Step 7

Sauté the vegetables over medium heat for 1-2 minutes, just until they are slightly tender but still retain a pleasant crispness. Overcooking the vegetables will make them mushy.

Add the cooled Vienna sausages to the pan. Stir-fry for about 30 seconds to 1 minute, ensuring the sausages are coated with oil and lightly browned. This step helps the sausages develop a nice glaze.

Step 9

Add 2 Tbsp of ketchup and 0.7 Tbsp of soy sauce (or oyster sauce). It’s best to start with less soy sauce (less than 1 Tbsp) as the saltiness of sausages can vary. Taste and adjust seasoning later if needed.

Stir-fry for another minute, tossing gently to ensure the sauce coats all the ingredients evenly. The mixture should look glossy and appealing.

Taste the stir-fry. If it needs more flavor, add a little more soy sauce or ketchup to achieve your desired balance of sweet and savory.
