Main Ingredients
- 6 HACCP certified Vienna sausages
- 1 sheet of HACCP certified square fish cake
- 180g fresh King Oyster Mushrooms
- 40g apple
- 40g onion
- 20g green onion
- 1 dried red chili pepper (adds a touch of heat)
- 3 cloves garlic
- 140ml water
- 1/2 Cheongyang chili pepper (optional, for extra spice)
- 1/3 red chili pepper (optional, for color)
Seasoning
- 1.5 Tbsp HACCP certified cooking wine (removes odor and enhances flavor)
- 1.5 Tbsp HACCP certified corn syrup (for gloss and sweetness)
- 2 Tbsp HACCP certified soy sauce (the base of umami!)
- 1 Tbsp whole black peppercorns (for a burst of flavor)
- 1 tsp tuna extract (adds depth)
- 1 Tbsp sesame oil
- A pinch of toasted sesame seeds (for garnish and nutty flavor)

Cooking Instructions
Step 1
Prepare all the HACCP certified ingredients for today’s dish. You can cook with confidence knowing they are safe and high quality.

Trim the tough ends of the king oyster mushrooms, then slice them into 2-3 bite-sized pieces. To make them even more appealing and help them absorb flavor, make cross-shaped score marks on the wider side of the mushroom slices.

Cut the square fish cake into bite-sized pieces, approximately 3cm x 3cm.
Step 4
Score the Vienna sausages about 5-6 times. A helpful tip: place chopsticks on both sides of the sausage while scoring. This prevents the knife from cutting all the way through and ensures even scores, resulting in a nicely fanned-out appearance when cooked.
Step 5
Prepare the aromatics and vegetables. Core the apple and slice it into about 1cm thick pieces. Slice the onion similarly. Slice the green onion diagonally. Thinly slice the garlic cloves. Leave the dried red chili whole.

Finely chop the Cheongyang chili pepper and red chili pepper for a touch of heat and color. (Feel free to omit the Cheongyang chili if you prefer less spice.)

Now, let’s make the delicious braising liquid. In a pot, combine the sliced apple, onion, green onion, dried red chili, and garlic. Add the water and all the seasoning ingredients (cooking wine, corn syrup, soy sauce, whole black peppercorns, tuna extract). Mix well and bring to a boil over high heat.
Step 8
Once the liquid begins to boil, reduce the heat to medium and simmer for 10-15 minutes. This allows the flavors from the vegetables to infuse into the liquid, creating a rich base.
Step 9
After the vegetables have softened slightly, add the prepared king oyster mushrooms to the pot and let them simmer for about 5 minutes. The mushrooms will absorb the delicious flavors of the sauce.
Step 10
While the mushrooms are simmering, carefully strain the braising liquid into a separate bowl. This flavorful liquid will be used to simmer the sausages and fish cakes.
Step 11
Pour the reserved braising liquid back into the pot. Add the cut fish cake, scored Vienna sausages, and the chopped Cheongyang and red chili peppers. Simmer over medium-low heat until the sauce has reduced and thickened slightly.

When the sauce is almost gone, add the king oyster mushrooms back into the pot. Stir everything together and simmer for another 1-2 minutes, allowing all the ingredients to meld together.

Turn off the heat. Drizzle in the sesame oil and sprinkle with toasted sesame seeds. Stir gently to combine. This final touch adds a wonderful aroma and nutty flavor.
