  • 4 slices sandwich ham
  • 2 Tbsp finely chopped green onion (scallion)
  • Pinch of salt
  • Pinch of black pepper
  • 0.5 Tbsp sesame oil
  • Cooking oil (grapeseed oil recommended)

Step 1

Begin by cracking 6 large fresh eggs into a clean bowl. Season them with a pinch of salt and a pinch of black pepper to taste.

Step 2

Add 2 tablespoons of finely chopped green onion to help eliminate any eggy smell and enhance flavor, along with 0.5 tablespoons of sesame oil for a nutty aroma and richness.

Step 3

Using chopsticks or a whisk, beat the egg mixture thoroughly until smooth and no lumps remain. A well-beaten egg base is key to a tender texture.

Step 4

Prepare your frying pan over medium heat. Add cooking oil generously, then use a paper towel to spread a thin, even layer of oil across the entire surface of the pan. This ‘oiling’ step is crucial to prevent the egg from sticking and to ensure a beautiful roll.

Step 5

Pour about half of the seasoned egg mixture into the preheated pan. Gently tilt and swirl the pan using your wrist to spread the egg mixture thinly and evenly across the bottom. Aim for a delicate layer that will cook quickly.

Reduce the heat to medium-low or low. Let the egg cook until it’s about 70-80% set (the top is still slightly wet). At this point, carefully lay 2 slices of sandwich ham side-by-side over the cooked egg layer.

Using a spatula, begin to roll the egg from the edge where the ham is placed, gently rolling it towards the other side. Be tender to avoid tearing the ham or the egg.

As you continue to roll, push the formed egg roll towards the bottom edge of the pan. This creates an empty space on the pan for the next addition of egg mixture.

Add a little more cooking oil to the empty space in the pan. Again, use a paper towel to coat the area with a thin layer of oil. This ensures the next layer of egg adheres properly without sticking.

Similar to the previous step, let the egg cook until it’s about 70-80% set. Then, lay the remaining 2 slices of ham side-by-side on the new egg layer. Carefully roll the egg over the ham, just as you did before.

Once you’ve almost finished rolling, move the egg roll towards the bottom of the pan again. Now it’s time for the final layer: pour all the remaining egg mixture into the empty space, ensuring it covers the previous roll.

Following the same oiling and wiping technique, pour the last of the egg mixture into the pan. Gently roll the entire thing to encompass all the layers, making sure the ham is distributed evenly throughout. You can roll it multiple times to achieve a nice shape.

After completing the final roll, move the entire ham and egg roll to the bottom of the pan. Reduce the heat to low and cook the sides of the roll. Gently turn and cook each side for about 1 minute until golden brown and fully cooked through. Turn off the heat and let the residual heat finish cooking the inside for a moment.
