Savory Chive Jangjorim (Braised Chives) – The Ultimate Rice Topping!

Do you often find yourself with a little bit of chives left over after grocery shopping? This recipe for ‘jjabak-i’ (a type of Korean braised dish) made with leftover chives is a fantastic way to clear out your fridge and create a flavorful side dish.
Main Ingredients
- 1 bunch fresh chives (approx. 100g)
- 1/2 medium onion
- 2 Korean chili peppers (adjust to your spice preference)
Special Seasoning Mix
- 90ml soy sauce (approx. 1/2 cup)
- 1 Tbsp anchovy sauce
- 2 Tbsp plum syrup
- 1 Tbsp Korean chili flakes (for a touch of heat)
- 1 Tbsp minced garlic
- 1 Tbsp sugar (adjust to taste)
- 2 Tbsp sesame oil (for nutty aroma!)
- 2 Tbsp toasted sesame seeds (for garnish)

Cooking Instructions
Step 1
First, wash the chives thoroughly and pat them dry. Cut them into approximately 2-3 cm lengths. Thinly slice or finely mince the onion. For the Korean chili peppers, remove the seeds and finely chop them for a cleaner taste; if you prefer it spicier, you can leave the seeds in.
Step 2
In a bowl, combine 90ml of soy sauce, 1 Tbsp anchovy sauce, 2 Tbsp plum syrup, 1 Tbsp Korean chili flakes, 1 Tbsp minced garlic, and 1 Tbsp sugar. Whisk everything together until you have a well-blended, delicious seasoning sauce. You can substitute plum syrup with corn syrup or adjust the sugar amount according to your preference.
Step 3
Add the chopped chives, onion, and chili peppers prepared in step 1 to the seasoning sauce from step 2. Gently mix everything together with your hands or a spoon until the vegetables are well coated. Finally, stir in 2 Tbsp of sesame oil and 2 Tbsp of toasted sesame seeds. This flavorful chive jangjorim is ready to enjoy! It’s delicious immediately, but letting it sit in the refrigerator for a while will allow the flavors to meld and deepen even further.
