Bulgogi Radish Greens Pizza Ingredients
- 4 Tbsp prepared seasoned radish greens
- 2 pieces of pre-made tteokgalbi
- 6 fresh button mushrooms
- 6 Tbsp cream basil pasta sauce
- 4 Tbsp tomato sauce
- 400g triple shredded cheese
- 10 fresh radish green leaves
- 4 Tbsp prepared seasoned radish greens
- 2 pieces of pre-made tteokgalbi
- 6 fresh button mushrooms
- 6 Tbsp cream basil pasta sauce
- 4 Tbsp tomato sauce
- 400g triple shredded cheese
- 10 fresh radish green leaves
Cooking Instructions
Step 1
Thoroughly wash the radish greens, paying special attention to scrubbing the root ends to remove any dirt. Rinse them 5-6 times until completely clean, then drain the water. Cut the root parts into 1-inch pieces and the stems and leaves into 2-inch pieces to prepare for blanching.
Step 2
Bring a pot of water to a boil. First, add the radish green roots, followed by the stems, and finally the leaves. Blanch them very briefly for about 2-3 seconds to maintain their crispness. Immediately transfer the blanched greens to cold water and rinse. Squeeze out as much water as possible by hand.
Step 3
Finely chop the well-drained radish greens. Chopping them into smaller pieces will help them absorb the seasoning better and improve the texture.
Step 4
In a bowl, combine the chopped radish greens with minced garlic, salt, and sesame oil. Gently mix and knead the ingredients together to ensure the seasoning is evenly distributed. Taste and adjust the salt if needed.
Step 5
Your ‘Seasoned Radish Greens’ are now ready! They have a delicious salty, savory, and slightly pungent flavor that’s great as a side dish or as a unique pizza topping.
Step 6
Prepare the pizza toppings: slice the button mushrooms and microwave the pre-made tteokgalbi for a short time until warm, then cut it into bite-sized pieces. Having these ready beforehand makes the pizza assembly much smoother.
Step 7
Spread the puff pastry pizza dough evenly. Apply a thin layer of cream basil sauce over the dough. To balance the richness, add small dollops of tomato sauce here and there. (I mixed arrabbiata sauce and fresh tomato sauce for this step.)
Step 8
Generously sprinkle the triple shredded cheese over the sauces. Arrange the prepared tteokgalbi pieces on top, followed by the seasoned radish greens. Finally, add the sliced button mushrooms for a colorful topping.
Step 9
Cover the toppings with another generous layer of cheese. Place the pizza in the freezer for a short while. This step helps the pizza hold its shape and prepares the base for pan-frying, ensuring a crisp bottom crust.
Step 10
Heat a skillet over medium-low heat. Carefully place the pizza onto the hot skillet and cook until the bottom crust is golden brown and crisp. You’ll know it’s ready when the pizza moves freely on the pan. Once the bottom is nicely browned, transfer the pizza to an air fryer.
Step 11
Air fry the pizza at 165℃ (325℉) for approximately 13 minutes. Keep an eye on it to prevent burning.
Step 12
Your Bulgogi Radish Greens Pizza is complete! The crust is perfectly crisp, the cheese is melted and gooey, and the tteokgalbi is deliciously cooked. For a fresh finish, tear some fresh radish green leaves and sprinkle them on top, similar to how you would add basil. The tteokgalbi provides a savory, bulgogi-like flavor, while the radish greens add a delightful crunch, making this pizza rich but not heavy. One slice is incredibly satisfying!
