Easy Homemade Beef Inari Sushi Recipe
A delightful twist on classic Inari sushi! These flavorful pockets combine the tangy sweetness of seasoned sushi rice with savory stir-fried beef and vegetables, making them a perfect quick meal, lunchbox addition, or appetizer.
Main Ingredients
- Beef (ground or finely chopped) 6 pieces (approx. 100g)
- Carrot 1 piece, 0.5cm thick (finely diced)
- Onion 1/4 piece (finely diced)
- King Oyster Mushroom 1/4 piece (finely diced)
- Chili pepper 1/3 piece (seeds removed and finely diced, optional)
- Store-bought Inari sushi kit 1/2 pack (for 2 servings of rice)
Beef Seasoning
- Soy sauce 1/2 Tbsp
- Ginger juice 1/2 Tbsp
- Plum extract (Maesil Cheong) 1/2 Tbsp
- Minced garlic 1/2 Tbsp

Cooking Instructions
Step 1
First, prepare the beef. You can use ground beef or finely chop thinly sliced beef into pieces smaller than 1cm. In a bowl, combine the beef with 1/2 Tbsp soy sauce, 1/2 Tbsp ginger juice (or minced ginger), 1/2 Tbsp plum extract, and 1/2 Tbsp minced garlic. Mix well with a spoon and let it marinate for about 10 minutes.
Step 2
Next, prepare the vegetables. Finely dice the carrot, onion, and king oyster mushroom into pieces about 0.3cm in size. If you prefer a bit of spice, finely dice 1/3 of a chili pepper (red or green), removing the seeds, and add it to the mix. Dicing the vegetables finely will give a pleasant texture to the sushi filling and make it easier to stuff into the Inari pockets.
Step 3
Heat a lightly oiled pan over high heat. Add the marinated beef and stir-fry quickly. Once the beef is almost cooked through, add all the prepared diced vegetables. Continue to stir-fry for about 3-4 minutes until the vegetables are tender and translucent. Be careful not to burn the seasoning.
Step 4
In a bowl, combine one serving of warm cooked rice (approx. 200g) with the sushi vinegar and seasoning mix from the Inari sushi kit. Gently mix with a spatula, being careful not to mash the rice grains. This amount is typically for 12 Inari pockets; feel free to adjust the rice quantity to your preference.
Step 5
Once the rice and seasoning are well combined, gently fold in the stir-fried beef and vegetable mixture. Mix only until the ingredients are evenly distributed to maintain the rice texture.
Step 6
Now it’s time to assemble the Inari sushi. Gently open each Inari pocket and fill it about 4/5 full with the seasoned rice. Avoid overfilling to maintain a neat shape. Finally, you can either fold the Inari pocket in half or top it with the savory beef and vegetable mixture. Your delicious Beef Inari Sushi is ready!
