Ingredients
- Beef brisket (chadolbagi) 1 handful (approx. 150-200g)
- Eggplant 1 handful (1-2 medium)
- Onion (about 1/4)
- Mushrooms (optional, e.g., king oyster, shiitake) 1/2 cup
Seasoning
- Oyster sauce 3-4 Tbsp (adjust to taste)
- Minced garlic 1 Tbsp
- Black pepper to taste
- Oyster sauce 3-4 Tbsp (adjust to taste)
- Minced garlic 1 Tbsp
- Black pepper to taste
Cooking Instructions
Step 1
First, wash the eggplants thoroughly and pat them dry. Eggplant becomes wonderfully tender when cooked, but if you prefer a bit more texture, you can cut them into larger pieces.
Step 2
Take the beef brisket out of the freezer and let it thaw. Using fresh beef brisket will enhance the flavor even further.
Step 3
Prepare the vegetables to stir-fry with the eggplant. Slice the onion thinly and cut the mushrooms into bite-sized pieces. (The original recipe mentions using onion, mushrooms, and carrots; the onion is especially recommended for its sweetness!)
Step 4
Cut the eggplants into bite-sized pieces or your desired size. If you dislike a mushy texture, cutting them slightly larger will help. Heat a pan with a little oil, add the eggplant slices, and stir-fry until they begin to turn lightly golden brown on the edges.
Step 5
Once the eggplant is partially cooked, add the beef brisket and stir-fry together. As the eggplant releases moisture and the brisket renders its fat, it’s important to stir well to prevent sticking and ensure even cooking.
Step 6
Now it’s time to add the flavorings. Add 3-4 tablespoons of oyster sauce, 1 tablespoon of minced garlic, and a pinch of black pepper. (The original recipe used 4 tablespoons of oyster sauce for about 400g of brisket and 4 eggplants.) Adjust the amount of oyster sauce according to your preference.
Step 7
Finally, add the prepared onions and mushrooms (and any other vegetables like carrots) and stir-fry everything together. The vegetables will add natural sweetness and depth of flavor as they cook.
Step 8
Once all the ingredients are well-cooked and the sauce is evenly distributed, it’s done! Check if the onions are translucent and tender. Your delicious Beef Brisket and Eggplant Stir-fry is ready!
Step 9
This dish is so simple, you won’t even break a sweat making it! The combination of chewy beef brisket and tender eggplant is exquisite, making it a fantastic appetizer or a satisfying side dish. Enjoy your meal!
