Ingredients
- Bacon 150g
- Cooked Rice 1 bowl (approx. 200g)
- Scallions 15cm length
- Carrot 1/4 medium
- Eggs 2 large
- Chicken stock 1/3 Tbsp (or a pinch of chicken powder)
- Black pepper to taste
- Minced garlic 1 Tbsp
Cooking Instructions
Step 1
First, prepare the aromatics. Finely chop about 15cm of scallions. Using both the white and green parts will add more flavor.

Next, prepare the other ingredients. Cut the 150g of bacon into bite-sized pieces, about 1cm wide. Finely dice the 1/4 carrot. Dicing the carrot small will give a pleasant texture when stir-fried.
Step 3
Now, let’s start stir-frying. Heat a pan over medium heat and add 1-2 Tbsp of cooking oil. Add the chopped scallions and 1 Tbsp of minced garlic, and stir-fry for about 1 minute until fragrant, creating a flavorful scallion oil. Be careful not to burn them.
Step 4
Once the scallions are fragrant, add the diced carrot and chopped bacon to the pan. Continue to stir-fry together for about 1-2 minutes. The bacon will start to release its fat, and the carrots will begin to soften slightly.
Step 5
When the bacon is golden brown and has rendered some fat, push the ingredients to one side of the pan. Crack the 2 eggs into the empty space. Whisk the eggs with a fork or spatula and scramble them until they are just set but still slightly moist. This will make the fried rice creamier.
Step 6
Once the eggs are mostly cooked, mix them with the other ingredients in the pan and stir-fry for another minute. Then, add the bowl of warm cooked rice. Use a spatula to break up the rice grains and stir-fry everything together until it’s fluffy and well combined. Ensuring the rice grains are separated is key for a good fried rice.
Step 7
After the rice is stir-fried to a fluffy consistency, add 1/3 Tbsp of chicken stock and mix well. Finally, sprinkle a little black pepper for extra flavor, and give it one last stir to combine everything perfectly. Your delicious Bacon and Egg Fried Rice is ready!
