Ingredients
- 1 can Tuna (drained)
- 1 block Firm Tofu (approx. 300g)
- 2 Korean Green Chili Peppers (Cheongyang peppers)
- 20g Carrot
- 1 Egg
- 3 Tbsp Potato Starch
- 1 Tbsp Oyster Sauce
- 2 Pinches Salt
- Pinch of Black Pepper
- 1 Tbsp Sesame Oil
- Cooking Oil (for frying)
Cooking Instructions
Step 1
First, it’s crucial to drain the oil from the canned tuna completely. Open the can, place it over a sieve, and press to remove all excess oil. This step ensures the patty mixture isn’t too moist and preserves a clean, mild flavor.
Step 2
Next, finely mince the vegetables. Remove the seeds from the Cheongyang peppers and chop them finely for a touch of spice. Finely dice the carrot to add color and texture. (Optional: You can also finely mince the white part of a green onion for added flavor.)
Step 3
Removing moisture from the tofu is key to the patty’s texture. Mash the tofu with the back of a knife, then place it in a cheesecloth or paper towels and squeeze firmly to remove as much water as possible. Well-drained tofu prevents the mixture from becoming too loose and helps the patties hold their shape when cooking.
Step 4
In a large bowl, combine the mashed tofu (with excess water squeezed out) and the drained canned tuna. Add all the finely diced carrot and Cheongyang peppers.
Step 5
Now, let’s add the seasonings and binders to perfect the mixture. Crack in one fresh egg, add the potato starch, oyster sauce for a savory depth, sesame oil for aroma, salt for taste, and a pinch of black pepper.
Step 6
Mix all the ingredients thoroughly with your hands until well combined. Knead the mixture until it becomes slightly cohesive – this forms your delicious tofu and tuna patty batter. If the mixture seems too wet, you might need a little more starch; adjust accordingly.
Step 7
Heat a frying pan over medium heat and add a generous amount of cooking oil. Scoop out portions of the batter with a spoon and shape them into small, flattened patties with your hands. Place them carefully into the hot oil.
Step 8
Once one side is golden brown, flip the patties to cook the other side evenly. Continue frying until both sides are beautifully golden and cooked through. Your savory tuna and tofu patties are now ready! They’re delicious served hot or even when cooled.
