Ingredients
  • 5 Gweamegi (semi-dried Pacific saury)
  • 2 Tbsp Soy Sauce
  • 1 Tbsp Red Pepper Flakes (Gochugaru)
  • 1 Tbsp Red Pepper Paste (Gochujang)
  • 1 Tbsp Minced Garlic
  • 2 Tbsp Cooking Wine (Mirin or similar)
  • 2 Tbsp Plum Extract or Syrup
  • Pinch of Black Pepper
  • A little Scallion (chopped)
  • A little Sesame Seeds

Cooking Instructions

Step 1

Take the Gweamegi from the freezer and let it thaw naturally. Once thawed, place the Gweamegi in a preheated, dry frying pan and grill both sides until golden brown. Gweamegi releases a lot of its own oil, so there’s no need to add extra oil. While the Gweamegi is grilling, let’s use the time to prepare a delicious braising sauce.

Step 2

In a bowl, combine 2 Tbsp of soy sauce, 1 Tbsp of red pepper flakes, and 1 Tbsp of red pepper paste. Mix well.

Step 3

Next, add 1 Tbsp of minced garlic, 2 Tbsp of cooking wine, and 2 Tbsp of plum extract (or syrup) for sweetness and flavor.

Step 4

Finally, sprinkle a pinch of black pepper and gently stir-fry the ingredients over low heat to create the sauce. (Be careful not to burn the sauce.)

Step 5

While the sauce was being made, the Gweamegi grilling in the pan has become nicely golden brown on both sides. Even at this stage, it’s a delicious and savory grilled fish, and the aroma might attract curious children.

Step 6

Tilt the frying pan slightly, and you’ll see a good amount of oil has rendered from the Gweamegi itself. This oil adds to the Gweamegi’s flavor, so don’t discard it. Now, cut the grilled Gweamegi into bite-sized pieces (about 3-4 cm) using scissors.

Step 7

Add the cut Gweamegi to the prepared sauce in the frying pan. Braise over medium-low heat, ensuring the sauce coats the Gweamegi evenly. Finish by sprinkling with chopped scallions and sesame seeds to complete the flavorful braised Gweamegi.
