Main Ingredients
- 6 sheets of Dried Minnow (Baengeopo)
Braising Sauce
- 4 Tbsp Water
- 2 Tbsp Soy Sauce
- 1 Tbsp Sugar
- 1.5 Tbsp Corn Syrup (or Oligosaccharide)
- 1 Tbsp Sesame Oil
- A pinch of Toasted Sesame Seeds
- 4 Tbsp Water
- 2 Tbsp Soy Sauce
- 1 Tbsp Sugar
- 1.5 Tbsp Corn Syrup (or Oligosaccharide)
- 1 Tbsp Sesame Oil
- A pinch of Toasted Sesame Seeds
Cooking Instructions
Step 1
First, prepare the star of our dish: the baengeopo. You can easily find it at most grocery stores. A typical pack contains about 6 sheets and costs around 7,500 won (price may vary by brand).
Step 2
Just like you might lightly toast dried anchovies before stir-frying to remove any fishy smell, doing the same for baengeopo enhances its flavor. Heat a dry pan (no oil) over low heat and lightly toast each sheet of baengeopo until it’s golden brown and slightly crisp on both sides.
Step 3
Once toasted, cut the baengeopo into bite-sized pieces. This makes them easier to handle and ensures the sauce coats them evenly.
Step 4
If you’re making this for children, cutting them into smaller pieces will make them easier for little hands to pick up. (Tip: As the toasted baengeopo can be brittle and create some dust, place a tray or newspaper underneath while cutting to make cleanup much easier.)
Step 5
Now, let’s make the delicious braising sauce. In a small bowl, combine the water (4 Tbsp), soy sauce (2 Tbsp), sugar (1 Tbsp), and corn syrup (1.5 Tbsp). Stir well until the sugar is completely dissolved. (Tip: You can substitute sugar with plum extract for a subtle sweetness and fragrant aroma.)
Step 6
Pour the prepared sauce into a pan and bring it to a gentle boil over medium heat. Letting the sauce simmer briefly helps to develop its flavors.
Step 7
Once you see the sauce bubbling nicely, carefully add the pre-cut baengeopo pieces to the pan.
Step 8
Gently toss and mix the baengeopo in the simmering sauce, ensuring each piece is evenly coated. This step is crucial for the baengeopo to absorb the delicious flavors.
Step 9
Continue to cook over low heat, stirring occasionally, until the sauce has reduced and thickened slightly, coating the baengeopo. Be careful not to cook over high heat, as this could cause the sauce to burn.
Step 10
When the sauce has reached a nice syrupy consistency and the baengeopo looks glossy, turn off the heat. Stir in the sesame oil (1 Tbsp) and toasted sesame seeds (a pinch) to finish. The nutty aroma of sesame oil and seeds adds the perfect final touch to this delightful braised baengeopo.
