I tried making the ‘Eo-nam-seong Egg Fried Rice’ recipe by food researcher Ryu Soo-young. Initially, I was worried about a fishy smell since fish sauce is an ingredient, but surprisingly, the fish sauce odor completely disappeared, resulting in a delicious fried rice. This simple yet fantastic dish is incredibly satisfying.

The secret to enhancing the flavor of fried rice is green onion oil. Finely chop about 1/4 stalk of green onion for making the oil. Chopping it finely allows the onion’s flavor and aroma to infuse evenly into the oil, creating a more delicious base.

In a frying pan, combine the chopped green onions and 3 Tbsp of cooking oil. Keep the heat on low. If cooked over high heat, the onions can burn, so simmering gently over low heat allows the onion’s sweetness and fragrance to fully meld with the oil, which is crucial for the best flavor.
