Step 1
We’re making a delicious Abalone Liver Porridge using fresh live abalone! This recipe specifically utilizes the abalone innards that were separated after making abalone braised dish. If you’ve already seen our abalone braised dish recipe, this will be even easier to follow. (Please refer to the previous post for the abalone braised dish recipe!)
Step 2
First, clean the prepared abalone innards. Heat about 1/2 tablespoon of sesame oil in a pan over low heat and gently stir-fry the innards. This process reduces any fishy smell and brings out a nutty aroma. Be careful not to burn them; a light sauté is key.
Step 3
There are two ways to prepare the sautéed abalone innards for the porridge. First, you can place the sautéed innards directly into a blender or mortar and grind them into a fine paste, adding a little water as needed. Alternatively, you can finely chop or grind the innards first, and then stir-fry them. Whichever method you choose, ensure the innards are processed finely so they blend smoothly into the porridge, adding rich flavor.
Step 4
Now, let’s cook the porridge. If using soaked rice, heat the rice in a pot with a little sesame oil until the grains become translucent. Once the rice is well-toasted, add plenty of water and simmer until the rice grains are soft and fully cooked. If using leftover cooked rice, simply add the rice and water to a pot and boil until the rice grains break down and the mixture thickens into a porridge consistency. Boiling until the rice is very soft is the secret to a smooth texture.

While the porridge is cooking, prepare the abalone slices. Slice the abalone meat into bite-sized pieces. You can sear them in butter for a delicious taste, but for this recipe, we’ll lightly pan-fry them over low heat with a drizzle of sesame oil. The abalone, infused with the aroma of sesame oil, creates a fantastic combination with the porridge.
Step 6
Once the rice grains have fully broken down and the porridge has reached a thick consistency, turn off the heat. Just before serving, drizzle a little more sesame oil and stir it in. The nutty fragrance of the sesame oil will permeate the porridge, enhancing its rich flavor. At this point, taste the porridge and season with salt according to your preference. It’s best to avoid making it too salty.
