Ingredients
- Fontana Bologna Bacon Bolognese Spaghetti Sauce 430g, 1 bottle
- Spaghetti noodles, enough for 2 servings (approx. 180-200g)
- 2 fresh onions, thinly sliced
- 10 whole garlic cloves, thinly sliced
- 2 squid, cleaned (body sliced into rings, tentacles cut into bite-sized pieces)
- 6 fresh abalones, cleaned and scored
- A pinch of coarse salt (for pasta water)
- Plenty of olive oil (for sautéing garlic)
Cooking Instructions
Step 1
Wash and prepare all ingredients. Thinly slice the onions and garlic. Cut the cleaned squid into rings and tentacles into bite-sized pieces. For the abalone, scrub them thoroughly to remove any grit. Carefully detach the meat from the shell, remove the innards and the tough ‘beak’, then score the abalone meat in a crosshatch pattern. Scoring makes the abalone more tender and helps it absorb the sauce better.
Step 2
In a large pot, bring plenty of water to a rolling boil. Add 1-2 tablespoons of coarse salt to the boiling water. Once the water is boiling vigorously, add the spaghetti noodles. Cook according to package directions, but aim to remove them about 1 minute *before* the suggested time for al dente. For most pasta, this is around 8-9 minutes. Using a timer is highly recommended for perfectly cooked pasta.
Step 3
Drain the cooked spaghetti using a colander. Do NOT rinse the pasta with cold water, as this washes away the starch that helps the sauce cling to the noodles. While the pasta is still hot, toss it with 1-2 tablespoons of olive oil to prevent the strands from sticking together.
Step 4
While the pasta is cooking, start on the sauce. Heat a generous amount of olive oil in a large skillet over medium-low heat. Add the thinly sliced garlic and sauté slowly until fragrant and lightly golden. Be careful not to burn the garlic. Once the garlic is fragrant, add the scored abalone and sauté for a couple of minutes until they start to change color. This step builds a foundation of flavor.
Step 5
Remove the sautéed abalone from the skillet and set aside on a separate plate. Setting them aside prevents them from overcooking and becoming tough, and also allows for a nice presentation later.
Step 6
In the same skillet with the garlic and any remaining oil, add the thinly sliced onions. Increase the heat to medium and sauté the onions until they become translucent and tender, stirring occasionally. Cooking the onions well brings out their natural sweetness and enriches the sauce.
Step 7
Briefly blanch the squid in boiling water for about 30 seconds to 1 minute, just until opaque and slightly firm. Be careful not to overcook, as this will make them rubbery. If your squid is already cut into rings, use as is. If it’s cut into strips for stir-frying, that’s perfectly fine too and will work in this recipe.
Step 8
Add the Fontana Bologna Bacon Bolognese sauce to the skillet with the sautéed onions and garlic. Also, add the blanched squid. Stir everything together to combine. Bolognese sauce, traditionally a meat-based tomato sauce also known as ragù, pairs wonderfully with seafood in this dish.
Step 9
Return the reserved abalone to the skillet and stir everything together once more. You now have a rich and hearty Bologna Bacon Bolognese spaghetti sauce brimming with abalone and squid. It smells and looks incredible!
Step 10
Add the cooked and drained spaghetti noodles to the skillet with the sauce. Toss everything together gently but thoroughly until the pasta is evenly coated with the delicious sauce. For an even better texture, you can toss it over medium heat for about 1 minute, allowing the sauce to adhere perfectly to the noodles.
Step 11
